MSG was invented by a Japanese food company Ajinomoto, and has been widely used in Japan longer than anywhere else in the world. Yet, Japanese have one of the longest life expectancy! If you go to a supermarket in Japan, you'll find insane amount of processed foods, all contain MSG. Having said that, they don't eat nearly as much foods as the Americans do. Bottom line is, its all about moderation. If you eat too much of something, it'll harm you. Heck, even drinking too much water can kill you.

Never had any symptoms after eating Chinese food, had a bad headache and bad tummy after consuming KFC food however.(Don’t eat a lot of chips and crisps) Could msg be the culprit??

No its not about that, MSG was really invented in Japan, to give food the umami flavour(especially a war thing), the problem with MSG that is dangerous, if its contaminated with bacteria, which usually gives you the problems such as headaches, diarrhea and so on. And seeing that in China hygiene is not really their strongest point, there is a reason to worry.

ignorant is bliss. You actually consumed much more MSG than the asian because we use it by ourselves, not eating processed food that contained MSG. And btw sugar is one of the top causes for health issue in the world.

In my family (Vietnamese) it translates to "sweet powder/flavouring powder" in think, so it sounds rather innocent. Personally MSG leaves my mouth a bit dry after comsuming it.

My sister who is a bit of a health food freak jumped on the MSG is bad bandwagon, she insists eating Chinese food makes her ill, she can taste something not right and very firmly lays the blame right at the door of MSG. What amuses me is she has eaten tons of food cooked by me over the years and usually only has good things to say, one day I will tell her that I use MSG in most things I cook just like salt and pepper.

Okay, so first off, that's the "sell by" date. meaning, stores have to sell that food by a certain date otherwise it has to be thrown out.As long as you have the food properly refrigerated, you can still cook it past its "sell by" date. Can't remember exactly, but food is cheaper to buy when it's near that date. Second of all, if they had sold bad spoiled food, they'd not make you feel hungry, but physically sick.

Ask Americans what is monosodium glutamate, 95% do not know. Now ask what is MSG, they freak out and 95% will tell you its used in Chinese food and is bad for you. That why it label monsodium glutamate on Doritos not MSG. So next time if someone told you no MSG make sure to double it up!

Honestly, as a kid I thought that mainly Chinese food contained msg. Now I know better but looking back it really felt like a hit against Asian foods. Right along with the b.s. about restaurants serving cats and dogs.

If you cook your own food, you dont have to add much. Just a pinch of the stuff is enough to give your food a pretty good edge. You wouldnt put spoons of salt into your food, same applies to msg

Lmao bruh I was talking to this dude at my job while we were on our lunch break I bought a bag of Doritos cool ranch and I saw this video the night before so I asked him if he liked msg and he said no it’s bad for your health and causes life threatening symptoms as starts quoting these “experiments” then I asked him if he wants some chip and he said yea, so I gave him a handful of chips and waited for him to finish it, right after he did I asked him if he’d ever eat msg and he said “there’s a reason why I hate Chinese” I laughed and said read the ingredients and handed him the bag. He didn’t know what msg stood for so he read it and asked what was wrong and I showed him what msg stood for and he looked at me and just turned around and left

Bob A not really lol. If you consume excessive amounts, then yes - there will be those consequences, same with iodised table salt. You also need to factor in your hydration levels too. You can’t go around making bold statements like that without a well-rounded observation. So long story short: check yaself

its more of chemical cuisine because you don't really play anything at molecular level, molecular gastronomy is called such because you tinker around the physical properties of your food, not the chemistry compound of it

@@archingelus it (molecular gastronomy) think about the chemistry too... For example, changing lactose in milk that have bland taste so it will have another flavour.. And so we change it to lactic acid but with fair amount so the milk taste is still in there.. How to do it, by fermenting the milk with certain bacteria... Another example, how to raising the umami/savory of tomatoes, but we want to make it easier to blend with other food and have longer life span (don't spoil fast)... You can dry it with freeze dryer (it a machine that used in food lab) and grind it to powder... So the water is reduced and the glutamic acid is concentrated.. Another one, how meat and fish is so tasty, even without MSG.. Because they have their own protein molecule that is inosinat (I don't know the english for inosinat, maybe inosinate🤔) that have similiar taste with glutamate... And many chemistry in molecular gastronomy.. It based on what I saw from my mother's researches and books since kid until now.. If you study in food processing departement, you will learn about those food chemistry too...

Be careful with that, it's still a sodium salt. Too much sodium can be really harmful. I personally recommend halving the salt content of the food you cook and replacing the missing salt with MSG. The sodium ion of MSG will add some saltiness back, while the glutamate ion should cover the remaining lack of saltiness. In both common salt and MSG, it's the sodium part we need to be careful with.

Basically too much of anything given to your body can freak out your cells and cause it to mutate, since that's basically what cancer really is. The alternative form of cancer is when someone pours toxic waste into your river for your city to drink.

If I eat large amounts of it, its involved in making me feel ill, along with the low quality food that depends on msg to have a flavor... There was one terrible Chinese restaurant in Boulder Colorado that used a lot of it.. Eating there gave me terrible headaches... Eating at every other Chinese restaurant in the state has never made me III... If I eat half a bag of doritos, I get the same headache, not surprising because Doritos are also cheap low quality food depending upon heavy seasoning to cover up low quality food.

I'm a personal Chef and back in college I actually did a research paper on the Sigma of MSG which turns out to be ALL about RACISM! Back in the late '60s and early '70s, NYC Asian restaurants were starting to get more and more popular and sales started getting hirer and hirer. Some or I should say Most of course didn't like it. So secretly Non-Asian restaurant owners took Asian food to laboratories to find out what was in it. It was discovered that a form of salt MSG Monosodium L Glutamate enhanced the flavor of salt and made the food taste more savory. So we know what happens next?? Those Non-Asian restaurants started screaming MSG is bad for you just to make real Asian restaurants suffer. Unfortunately, the bad word of mouth, and also public bashing made sales drop, and made people scared to consume MSG. So Asian restaurants were forced to remove it from their cooking. That's why when you go to some Asian restaurants on the menu in bold lettering NO MSG. This is a shame because now after many years of research they have determined MSG is not harmful, or life-threatening. The scare campaign was actually a HATE campaign! There are many products out on the market that most consumers eat that have always contained MSG but they didn't mention those because they were trying to put Asian restaurants out of business. Today you can find MSG at/in KFC, Chick-fil-A, Campbell's soups, Doritos, Pringles, and a whole lot more!!! I use it in 90% of my cooking especially baking when salt is one of the ingredients. I get RAVE reviews for my Cinnamon Rolls!! Oh, by the way, I got an "A" on my research paper and my professor was originally from Vietnam! 😛❤🔥💋

And most of the time it's not even a measured amount, they just 'throw' MSG in so you get hooked on the food. Your tongue can't pick up MSG as clearly as actual Salt, so as a result you end up over consuming this version of 'salt' without realizing it.

@Vic 77Parmesan cheese, Roquefort cheese, dried shiitake mushrooms, oyster sauce, miso, green tea, anchovies, ham, Emmental cheese are all rich sources of MSG. To say that "salt is not bad for you" is only a half-truth. Whilst it is true that if you do not have enough salt in your diet that will cause you problems to much salt is bad for your heart and circulatory system. There are ZERO articles published that support the notion that MSG is detrimental to human health and many that say it is not.

I worked for more than 10 Chinese restaurants in the past 10 years in the US, every one of them claims their food is MSG free but ALL of them were using it. the weird part is during this 10 years I had never encounter anyone that had so call "Chinese restaurant syndrome", even for some people that says they are allergic to MSG but eating in the restaurants more than 3 times a week.

Hey man not trying to be annoying. I’m 27 years old and just recently my friend 28 died of colon cancer directly related to msg consumption 100% same thing as you his mum used msg everyday 3 meals a day he moved out around 23 and he really started depending on the msg. We grew up together and I always thought it was strange because in my culture we don’t even know what MSG was. Like I said not trying to be annoying and give you some sob story just keep it in mind you’ll figure out what’s up. Clearly genetics and a million and one variables come into play but I believe it was a trigger.

People probably getting headaches because they're eating too much really salty food in general and not hydrating enough. The chinese home cooked food with msg added in would be healthier than eating a load of Pringles & KFC. Ive seen MSG in my local Chinese supermarket. Funny that I come across this video after 2 years it uploaded and I have two cents on this topic that I want to share. 'Disclaimer' I am a Hong Konger born Chinese and lucky to have little enough knowledge on food, some call us as foodie First, MSG is not evil substance, it brings out and enhance the flavor in your dish. As this video said, some people do react like allergy towards MSG, but mostly all can't even tell there is MSG in their food. If you have a sensitive taste buds like me, you can tell whether MSG has been used or not. The worst case you likely have is a chef overused MSG in your food, as a result you feel thirsty almost right away; all you need is drink some water but sugary beverage works the best in this case. Second, I am glad this video bring out umami, this is the key whether your food will taste good or not which relate to how much ingredients you use to cook your food. Everyone know sole steam or boil food has no flavor in them, in order to make it delicious, you must add variety ingredients in it. Now here comes the umami, it can be broth/stock, aged meat marinated with seasoning and such. This is the BASIC TASTE of your food, then follow by adding sugar, salt, soya, spice. Third, then why use MSG? The question is whether the chef want to spend hours to make their umami or not, note that time is an luxury that restaurant never have enough of it. The more time they spend on preparing, the more cost their food will be, that explain why you never find MSG is being used in Michelin star restaurant. That is because they spend lots of time to perfect their umami. Have you wonder why food in most Chinese restaurant can be cook so fast, and here is the answer. That being said, if the waiter/waitress tell you the dish will take time to make, that means that food you order is likely MSG free. Btw, you can always ask them not to use MSG in your Chinese takeout, just don't expect the taste will be the same though. In conclusion, using MSG is never controversial but likely discrimination towards Chinese food ,or worst, or Chinese people. If you are paying the usual cost for your food in Chinese restaurant, don't expect MSG will not be used. On the other hand, if you happen to find out their food is MSG free, tell them how much you appreciate on their effort to make their food taste good. One last thing though, always call out those restaurant which pretend to be MSG free when they are not. (If you wonder how does overused MSG will feel like, put 1/4 tablespoon on your tongue. Once you start to feel your tongue numb and thirsty, that's the sensation you are looking for)

Your body makes it. You don't need extra. you don't need an excess of it. You don't need an excess of salt. you don't need ANY oil. It's found in meat so why do you insist that you need to further season the meat with something that you will already are getting from it. MSG isn't good for you! it is simply not THAT bad for you, but anything in high doses becomes bad for you. Chinese restaurants are putting high amounts of MSG in their food. They're putting high amounts of salt in their food. and on top of that, they're cooking it in huge amounts of oil! and if they aren't putting MSG and salt in they're food, they're putting fish sauce in their food. FISH SAUCE CONTAINS MSG AND SALT. If you take any chinese restaurant, you will find that all of their food contains around 50% sodium or more! that's why people who say that they're "sensitive" to MSG say it makes them feel bad. It's because it SHOULD make them feel bad. If it doesn't make you feel bad then your'e simply used to it or lying. If you don't believe me, then try avoiding MSG for a year and try eating it again. But that's another thing about MSG and salt and sugar. THEY'RE ADDICTIVE. You don't want to quit. Just like cigarettes. Stop being in denial and admit that it's bad for you.

The glutamate in MSG is bound in proteins, and is not released from meat unless through prolonged cooking, fermenting, or staying in your gut. Your body doesn't need slow-cooked meat. Your body doesn't need miso. But it tastes good, so we eat it. And anytime we talk about a food is bad for you, we should be talking about the largest amount that is safe to eat. In that sense, MSG is as bad for you as salt, in that we shouldn't be having more than a couple grams a day, which is a ridiculously large amount for MSG.

If you have so much hatred in MSG (Or should I said Chinese food, or any kind of Asian food in general since you are so insist in LARGE amount of MSG/Salt/Fish Sauce/Sugar we put in our food), I only have 1 advice for you, either go vegan or just don't eat anything. Your argument pretty much tackles any precooked/restaurant/canned/snack food and soft drink/juice/or any kind of processed drinks out there in the world. If that so, just blaming the food industry, not just MSG. Since you say that your body makes it and don't need any extra. Yeah so then you can just water, fruit, and vegies with no cesar, no salt, no sugar is good for you. Enjoy your meal then, Bon Appetite. Like the vid said, putting MSG or any kind of flavor adding at a moderated amount is no harmful for you. Everything consumed at a large amount is other hand, even fruits and water.

I’ve eaten MSG everyday since Filipino food cooked in my home is usually used. I don’t like using it all the time, but I haven’t had any negative effects. Just don’t use a lot of it (in a dish) from what I’ve been told, since it isn’t good for you.

Everything taken in excess certainly has a fatal consequence. There was an instance that our neighbor used it in putting down a rabid dog by feeding an excessive amount of MSG which instantly killed it. Once, another neighbor used a pocket-size vinegar and forcibly took it into the goat's mouth to swallow the liquid before it was slaughtered.

MSG is one of the safest ingredients you can possibly use, Glutamic acid is at the intersection of several metabolic pathways, which means it can be converted into a carbohydrate or more complex amino acids, enzymes and so on. Plants can readily absorb through their roots and use it as a building block of other amino acids, energy or signaling.

Veganism can be unsafe if you don't take a basic multivitamin (+ mineral) supplement, since especially vitamin B12 is difficult to get from purely plant-based foods. For females, getting enough iron might be difficult as well, since plant-based iron (non-heme iron) is less bioavailable than animal (heme-bound) iron.

I lived in VN, and sometime I had back numbness when the restaurant over used MSG; it’s common to have that syndrome when eat at places use tons of MSG. All my friends and family have it, we called it MSG overdosed.

Do you eat chips? It is full of msg. Do you eat at KFC, McDonald's, Chick-fill-A, Popeye, etc. They use MSG. Sausages, pizza, sausage, cheese, canned and packet soups, seasonings, powdered gravy granules, stock and bouillon cubes, cold meat cuts, table sauces like soy sauce, salty snacks, prepackaged sandwiches, and instant noodles all contain MSG. Your sysmptom is probably from a different reason like obesity, poor conditioning, etc.

I had a roommate who's mother was visiting once. When he suggested going to a Chinese restaurant, she was disgusted and literally asked if they cook with bugs. When my brother was in high school he invited his friends to dinner in Chinatown and one of his friends brought a bag of McDonald's because he didn't want to eat the food. One time I was visiting a friend in Texas. He had work, so for lunch I went across the street to a Chinese spot and got an order of pepper chicken. When my friend came back I told him what I had for lunch and he was disgusted. It was literally just chicken, green peppers and rice.

My grandmother always incorporates Ajinomoto (a brand of MSG) into her food. I'm perfectly fine. It brings out the *UMAMI* in the food. She also adds soy sauce.

The reason people feel like crap after eating boxed Chinese food is because they're literally eating copious amounts of carbs, oils, and salts at one time. That being said, when I was little my mother purposely avoided food with MSG in it. I was not allowed to eat cheese puffs or Campbell's soup for this reason. Funnily enough, we ate a frick ton of Chinese food. And I do believe there are people who have a sensitivity to MSG just like some people can't eat a lot of salt or else they get headaches. My mother can't eat annatto which is a natural food coloring found in basically any orange food because it acts as a diorectic and dehydrates her so she gets serious migraines. What I'm basically trying to say is, just because a large group of people isn't affected by something doesn't mean some people aren't. I've also never heard Chinese food syndrome before today. So I wouldn't just assume anyone who is trying to avoid MSG is racist. I only say this because some people get bitter and will purposely feed someone who says they're allergic to certain things that food out of spite. Please don't do this. That it is all.

MSG isn't bad at all, i'm asian and common spices and sauces used in dishes contains MSG and I don't nor any of my family member gets head exploding symptoms, though It's like you said, as there are a group of people with no side effects there are also those that DO have side effects If, I consume a lot, and i mean a lot of MSG (not intentionally or anything but through others who cook using MSG, and alot of MSG) my whole arm feels like it's getting stabbed by needles all over, that acts like a numbing sensation but isn't at all. It hurts and that's why I avoid using MSG as much as possible! Though never knew a thing about this stigma at all honestly lol first time hearing this and yay, take things in moderation folks!

Wrong, MSG is an additive(artificial flavouring) that should be declared but restaurants do not(also quantity not known), you just cannot compare it to gluten which is a natural compound and NOT an additive... As a kid I was not health conscious at all,but I remember that chinese chicken soup that gave me an itching inside my brain which was creepy as hell and I found out it was the MSG and from then I boycott any restaurabt that may use it...

First off not all scientists agree that GMOs are "perfectly safe". Secondly saying all GMOs are safe or unsafe is kind of a broad stroke... That's like saying "all medicines are safe". A lot of it depends on the item, what they are modified for, and what sort of things you're testing for to consider it "safe". Just because *something* that is genetically modified is safe today doesn't mean that *everything* genetically modified is safe today and forever in the future.

According to the Pew Research Center, 9/10 scientists find GMOs safe. GMOs have been conclusively proven safe by the World Health Organization, the American Medical Association, the National Academy of Sciences, and the American Association for the Advancement of Science - to name but a few. I'll take the word of those millions of proven scientists over the flimsy suspicions of conspiracy theorists.

Funny is most countries that banned them are NATO & western countries from France, Germany, Austria, Australia, Poland and more. Nobodies know if GMO is 100% safe or not because there is no hard concrete scientific facts. I’m not anti GMO or pro GMO, but I know that GMO is not globally scientific proven to be safe. 1 - very few full countries have banned GMOs, just specific regions or states within those countries: en.wikipedia.org/wiki/Genetically_modified_food_in_Europe 2 - those that have banned them succumbed to the same non-scientific fear-mongering as the MSG fear in the video above (sans the racism). 3 - I've already said this ad nauseum, but science HAS proven the safety and efficacy of GMOs, hence the laundry list of hard-science organizations I listed in an earlier comment. When 9/10 of the entire world's scientists vouch for the safety of GMOs (the same percentage who have proven climate change is real and that vaccines are safe), then that is proven - not the "town cryer" nonsense of the 1/10 whose "theories" don't hold up to scrutiny.

There are people who eat only meats and veggies no grains no extra anything no spices etc no butter no oil for cooking some people love grains their diet is all dairy and grain but one of my scandinavian friends get sick when she has too much salt too much spice and starfruit some fruits make her sick if she eats a whole fruit. Lettuce and stuff too. Skinny lady but she only eats fish and meat thats how she was raised. So aside from being raised only on meat for the most part thats her linneage so she might actually be getting sick it might not be in he rhead. She also loves raw meat. I dont get sick from it ever but its disgusting the taste is fowl but she likes it and for someone else they might get sick. Its not racist to not want to eat her scandinavia weird people fish is it?

​@@baqikenny I worked with doctors once, long ago. Some of them were *very* cool, and neat, down-to-earth people. Real servant's heart people. Some of them were disgusting, and eaten up with vices. Most of them were incredibly arrogant. But not all, thankfully.

I love this stuff... and I'm very aware my increased likelihood of a migraine after is due to overeating and thereby becoming ... dehydrated... same reason we feel like we are dying after too much alcohol.

American consumed most MSG. You American put in your cheeto. Fries, big Mac, Frozen food. There are more than 11 names for MSG.... Natural flavor is one of them MSG. Chicken 🐔 broth...gravy MSG.

My class were discussing about MSG and they all said it'll cause nervous disorder, muscle cramps blablabla😒 and I just sat there silently because they won't believe that MSG is safe to eat. 😪

It sucks being affected by MSG, I’m so glad to see that this video is trying to get rid of the xenophobic stigma. But I can’t eat MSG anywhere, if I eat KFC or Cheeto’s I get a terrible headache and going out to eat is a frustrating gamble. When shopping I have to check labels all the time. However, I can have MSG in its most natural forms like tomatoes, Parmesan and soy sauce.

Or it's just placebo. You know theres msg in what you're eating so you get a headache. I can assure you that you'll never get one if you're not aware of it being in the foods you eat

Jacob I have eaten things that I didn’t know had MSG. I lived in Thailand for months and kept getting migraines and assumed it was because of neck problems. So I kept getting massages and doing yoga in hopes it’d go away. Eventually I realized that it was only after I ate out at certain vendors or dishes. It was all Thai but I just had to stay away from specific dishes or ask them not to add MSG.
