Matsutake mushrooms harvested in Japan can cost over $500 per kilogram. Mushroom foragers like Gihei Fujiwara search for matsutake once a year around early fall. But it's hard to predict the quality of a harvest. Over the past 70 years, Japan's harvest has declined by over 95%. Now the mushroom's future is unclear. So what makes these mushrooms so expensive? And why have they almost disappeared?

There won't ever be subtitles for the old japanese guy... they realized afterward he was talking about his urinary retention issues... but it was still cool to have an old guy speaking japanese.

Matsu mean pine 🌲 tree and “Take” is mushroom. A few days before one of my friends brought a mushroom as he often brought from the mountain. He suspects it is Mutsutake but it was very unique we try to find it out by searching books and the internet but we failed and leave it as it is. Today I visit a local former shop and I see differently kind of Mutsutake ranging from $20/400gm ~ $250/400gm.

Learnt about this mushroom from a video game called Cafeteria Nipponica developed by Kairosoft. Would somebody explain to me what does it taste like? How would you describe the aroma texture and smell/fragrance?

They have a distinct line aroma that also can be found in their flavor. They’re all over where I live in southern Oregon.
