Very well pointed BUT there is an easier way to cook them without soaking with oil or even water. You just cut them a bit thinner than you did, give it a good pinch of salt and cook on low heat while covered with lid. The mushrooms already have their water/ juice so if you cook them like that, they should "sweat" in 5-6 minutes. Then you can add a few puffs of oil spray and spices and keep cooking another 2-3 minutes. Be careful though, the juice can evaporate pretty fast without the lid.
@Felu
@Felu 2 жыл бұрын
well, I don't know if this is easier. You say it yourself that you have to be cautious without water. With water, you don't have to worry about anything and blast the heat. But thanks for your suggestion

Recently it’s been said to crush the garlic or cut it and leave it for 10 minutes before using it.. as it allows a component to be formed while left in the air for 10 minutes and make it more healthy.. so that could be an additional to the nicely low fat, low calories recipe you made! Very nice idea sautéing in water! I love it 👍🏻

I'm not sure how practical sauteing mushrooms for 45 minutes is, I also don't think it needs that much time at all. For me it's usually more like 5-15mins (depending on piece size). Once the water turns brown it means the tissue is breaking down. You can then let the water evaporate and then add the oil once the pan starts getting dry.
@Felu

If you want crispier mushrooms: Splash of oil, add mushrooms to the pan (zero seasoning) and don‘t move them for about 5 minutes or until sealed on that side. After mushrooms are sealed add your seasoning and whatever you want and finish cooking. Crispier mushrooms with a smoky flavor.

Looks good bro, thanks for the recipe. I cook mushrooms in a similar way, except I've never added laughing cow cheese to my mushrooms. Instead I usually add chopped onions, some thyme and a little splash of wine. It looks nice and creamy with the cheese, I might try it some time. Good amount of protein and surprisingly low calories.

Instead of adding water, you can toast it on your pan under low heat, brown both side by withdrawing the moisture from mushroom. This makes it more nutty and bring out the umami flavor of the mushroom.

People always say "Never wash your mushrooms, they will soak up all the water and you will never be able to brown them". So I have a question, instead of adding water as you have shown, at1:13, could I wash the mushrooms (making them waterlogged as people say) then add the freshly washed mushrooms to the pan to release their water instead of adding water as you show? Or is it best to not wash mushrooms and add water to pan separately?
@Felu
@Felu 2 жыл бұрын
You have to heat up the mushrooms so they collapse. So either you cook them with a bit of water or microwave them for a minute .Btw, its perfectly fine to wash mushrooms. They wont soak up a lot of water. There is a nice article from kenji lopez alt about this myth.
