3:26 - What they didn't expand on, is that ANY mistake during the series of tests you take results in a failure. You also have to eat your own dish at the end preparation test - so you better be sure you did it correctly.

If you want to know the safest place to eat properly prepared pufferfishes, it's a high grade hotel. It's an extremely public place with many people, and the entire hotel's reputation is on the line, not just the chef. They will take the preparation very seriously.

What I got from the video: This expensive fish needs lots of training to be able to prepare. If done right, it is chewy, white, thin, and has almost no flavour. But you MIGHT die.

I have an interesting story about pufferfish. I'm from a small town in mexico on the pacific coast and we have some many pufferfish they just wash up on our shores and die. So like 80 years ago, my grandfather, who owned a lot of the towns fisheries and fish stands, brought in some japanese chefs to teach the local women how to prepare the fish. We don't eat it raw, and it is absolutely delicious. I grew up eating it but we always called it "botete". One time I asked my mother what fish it actually was, cuz it was only ever sold in filets. She was like, "yeah its the puffy one on the beaches". I freaked out lol.

hello👋 you noticed well👍 I live in Yamaguchi Prefecture, where Shimonoseki is located. Tiger pufferfish is the most expensive puffer fish in Japan, and Yamaguchi Prefecture has the largest catch of tiger puffer fish in Japan. Therefore, you can eat puffer fish cheaply in Yamaguchi Prefecture. Yamaguchi residents don't eat fugu very often in Tokyo or Osaka. The reason is that the price is too high, and there are places where mackerel blowfish is sold as tiger blowfish. Also, fugu is not a fish to enjoy the taste. It's a fish that just enjoys the texture. When foreigners eat pufferfish, I think they will prefer deep-fried fugu over sashimi. Some Japanese say fugu sashimi is delicious, but I doubt that. It's not the pufferfish sashimi that's delicious, but the ponzu sauce, 'Momiji Orosi' and green onion soy sauce. Fugu sashimi enjoys the harmony of the taste of soy sauce and the texture of fugu. Next time you eat puffer fish, be sure to try fried chicken.

I have been catching and eating northern puffers (Sphoeroides maculates), since childhood. My Dad who was a butcher and a fisherman would clean and prepare them. There haven’t been any known cases of illness or death associated with these blowfish. It might be that this species is not as poisonous as the types eaten in Japan.

Fugu is amazing! When we had it, wasn't that crazy expensive about 100 PP for combo of 4-5 dishes consisting of sashimi, hotpot, fried fuku, with some fugu saki.

I ate this in Japan a decade ago without knowing what it was. I loved it and asked our host what it was. He eventually found the right English words to explain, and he then watched the colour drain from our faces.

@@Jius86 yep, (licensed) chefs remove the poison before serving, so it’s not uncommon to find some blowfish on a platter of assorted sashimi.

Try to visit Cebu, Philippines. We do have here Nilarang which is a soury soup and we use puffer fish and it only cost $0.6 each. The best seafood delicacy you would ever have in your entire life.

The price of fugu really varies where you purchase it. I live in japan and the tiger pufferfish sashimi is on sale for about $6. The price in this video is the price at a really expensive restaurant. Like other foods like steaks, the price varies a lot depending on where you purchase it. So most pufferfish sold aren’t too expensive. So they aren’t used for the wealthy to show off their wealth. It is popular in Japan mainly because of the subtle taste, a lot of Japanese people really likes the taste. And that explains why the slices are very thin. As the fish is chewy, if the slice was too thick, the consumer will concentrate on the chewing, and not catching the subtle flavour. It’s not like western food where foods usually have strong flavours. Many Japanese foods have subtle flavours.
