In this Labor Day bonus video we make a rich golden syrup out of Wood Sorrel. Wood Sorrel is well known for it's unique tartness and to some a lemony, citrus sort of flavor which adds a unique twist to pancakes, ice creams, waffles, cereals, etc.
Wood Sorrel is commonly foraged and is a popular wild edible in the spring, but it can be used anytime you find it growing. Usually people make a tea from wood sorrel, add them to salads, or just nibble on the leaves. However making a syrup is a great way to enjoy the flavor of Wood Sorrel throughout the winter time.
To make the syrup: Steep 1/2 cup of wood sorrel leaves, flowers, and pods in 1 cup of water for 15 minutes. Strain then add 1/2 cup sugar and simmer until thickness you desire. When done jar and label it, and store in refrigerator.

Wow, I never realized until I watched your videos how versatile you can be with this. Any herb you want to take medicinally but don’t want to take it as a tea (maybe it tastes bad, or just isn’t very pleasant, or you don’t enjoy it as a tea) you could turn into a syrup. Now, I am thinking of making a lemon balm and lemon verbena syrup. You inspire me yet again, Josh.

If you are prone to kidney stones, this is a plant to use sparingly, however. Luckily I am not and I am excited to try this. I bet it would make a nice cocktail mixer

Might also pour the “tea” syrup into cheese cloth and wring out all the goodness!

you could probably use a steeper when makign the sorrel tea first

Looks good, would probably add this to hot cocoa for a sweet and tangy zing for the chocolate.

im wondering, would it be a good idea to blanch the leaves first to remove extra oxalis acid, then freshen in ice water, then make the tea , before turning the tea into syrup?

Great video! I can wait to try with the some wood sorrell from side yard. Can this be done with honey or maple syrup instead of sugar?

Maybe you don't need honey or sugar. Wood sorrel tastes scrumptious just as it is.

I did the same with red clover flowers and it taste simaler to maple syrup. Not exactly the same but good.

Wheare I live wild black raspberrys are just in the yard and the forest so I guess picking them is a form of forging.

It absolutely is! I have a lot of berry bushes in my yard where I'm at now but didn't get a chance to pick them as I was moving in. This year I plan on having some videos about using them in different ways. Have fun berry picking it is a very fun thing to do and you get a nice reward as well! Thanks for commenting!

Trillium: Wild Edibles I just found some red Raspberry's that are ripe. Or maybe unripe BlackBerry. Also I think I found strawberries the bearrys look like straw Berry's at least deffenetly not snake berrys. Any tips on strawberry?

Though I get some sour zing when I make wood sorrel tea, I find that this flavor is lost when I make syrup. Your syrup truly tastes sour?

Yes the sour flavor is retained, though I have had a couple batches before that lost it but those were ones I either boiled too long or put too much sugar in. It's kind of a delicate balance to get it just right. I've also noticed really hard water can alter the flavor a lot too because I made it once with well water and it came out bitter so now I use water from the grocery store.

No maple syrup is my favorite. As a teenager I'd just drink it straight, went through about a pint a week for like a year or so. I don't anymore because it's obviously terrible for health to consume that much but I still take a good swig every now and then!
