Thanks for the video Clay, I guess you play a small part in my inspiration to get my own lifestyle block still in the first week of being on the place so barely begun :) 4 acres just starting to understand the responsibility for looking after it. Anyway you reminded me of sourdough which I used to make years ago so I started a bug just now while your video was playing may it live for many years :) For those curious I just put flour and water in a coffee jar mixed into a thin batter then just add to it every day by a tablespoon or so (I use cooled water from the jug as it eliminates the Chlorine because we are on town supply) eventually wild yeasts get in there and an ecosystem develops I doubt mine will be much good for a few months eventually you can just make bread from it any time you like and keep the mother in the fridge getting it out when you wish to bake bread. Your starter technique is excellent Clay remember you are creating an ecosystem so what you make your bread with you should feed the starter so the yeasts that specialize in that carb source become dominant. If you add sugars like honey to the starter then you create a starter that craves those sugars, stick by the starter without the sugar and eventually it will become a specialist in fermenting your recipe :) does that make sense?

Good morning mate .cuppa Tea sounds perfect but me gas canisters I use in me boat are horrible in winter they don't like burning so well..I know all about the fricken rats lol I get those big water rats .the bread looks and sounds amazing bro. Have an amazing week ahead.

Two things mate, Red bands 1 size to big and thick wool socks >> I have been starting the day with a cup of Stinging Nettle tea , very high in magnesium and other beneficial nutrients. Yesterday morning having a shower I grabbed the shampoo bottle and for the first time in years I was able to read the label without glasses. Up until then I hade to grab my glasses or ask the wife which was conditioner and which was shampoo. I can only put it down the the nettle tea, I'm hooked. tight lines brother..I also spread compost and urine around all our fruit trees..results are stunning , massive crops , pig poo from the Kunes..

I had a pair of warehouse shitters too, switched to blundstone and they're mint but probably can't go wrong with redbands. Hope you had a good weekend fishing and hunting mate, good on ya.

I hear ya about wet feet. I can't even feel my feet properly but still the most important body part to keep dry. I can do without alot we we go camping along as I have a pile of spare socks.

If I had rat holes like that in my tunnel house Id be too scared to go in there. They must be a pain. I live on the Coast and have never seen rat damage like that in a garden. Crazy. Have you tried having more cats around? I guess you can’t as your dogs would probably eat them.

Put the hose down the rats hole clay flush em out ,and i recommend muck boots neoprene gumboots from ppg wrightson put redbands and 4x4s to shame cheers

My dogs would kill them. We do have one thar lives in the house boat with a big run. He keeps the house boat mouse free.
