The day at "Alp Calfeisen" starts with heating up the huge cheese vat.
Cheese is still made by hand here according to a traditional method with milk from healthy cows grazing on high pastures.

Dairyman Andreas Itten takes us through the refined art of cheesemaking: turning milk into wheels of cheese, keeping the cheese at its prime until it arrives on the shop shelves, and then how alpine butter is made.

Im a candy master for a relatively large candy company. If I wore gloves I absolutely could not feel the texture and consistency the way that I need to. We dont use thermometers or spectrometers, after doing it for so long you begin to be able to tell just by touch. These guys all know exactly what they are doing.

If you love cheese, then you may want to try smoked cheese. Not the fake "smoked cheese", but one that someone actually smoked. It brings it a whole different level of flavor! If you live where the climate gets cold, say 30 to 45 degrees, Fahrenheit, cold smoking cheese is quite easy and delicious. Smoked Gouda cheese is a favorite here. If you live in a warmer climate, then try to smoke cheese in the early morning where it is coolest. Research cold smoking cheese if you're interested.

Its an actually pretty shitty life (Yes ik what im talking about). They sell their cheese super expensive, even for switzerland, which is already very expensive in general, thus most of the people dont buy this kind of cheese and go for cheaper ones, and thus makes them live a shitty life since their source of income is going lower by the day, cuz they also have to lower prices.

I am a Dairy Cheese Technican, and I teach Milk and Cheese Technology. I have worked like that year ago, in my young days when I was studying. Believe me, it looks romantic but it’s a very tough job. You work many hours with heavy equipment. Those Cheese blocks weigh between 15 and 20 kg. And you produce many every day, and you have to turn them upside down everyday. And then once a week, until they’re ready. You could have hundreds in storage fermenting. Butter making is tough as well for the back. Another thing I noticed in the comments section is some people are demanding gloves. Wrong. It is forbidden to use any kind of gloves for many reasons. 1- You wash 🧼 🧽 your hands. There’s a procedure for it. 2- Wash and sterilize your equipment 3- Analyse the content of your milk, then standardize it. Then you go on and proceed Any kind of gloves will make it impossible to proceed. And you’ll just have loose parts of gloves 🧤 in the whey. When doing that job, it’s important not to wear anything that can be lost or dissolved inside the Cheese Vat. No rings, no necklaces, no earrings, no piercings, no band aid. Only dairy clothes. And lastly you need to have a good health. No digestion problem and no skin problem allowed. Zero tolerance there. And good healthy body to carry out the heavy job for hours. I hope I answered your questions.
