The legendary world famous Wolfgang Steakhouse. It is almost a sure bet that one would get a good steak at this place.
So, I thought I might use the opportunity to show you guys a dry-aged steak by going for their USDA Prime 60 days dry aged ribeye.
And this was absolutely phenomenal, there really isn't anything like a proper dry-aged steak. Unfortunately, the experience wasn't perfect.

Great review. I would recommend you to have it rare next time for a piece of 60 days dried aged to fix that dryness issues and you get to appreciate the full extend of the beef taste. Under season it on purpose, some people prefer full natural taste, and like you said, it is an easy fix with a pitch of salt. Go with their famous side, german potatoes, is an absolute must.

I was scrolling through shorts in the middle of the night and stumbled upon your food reviews, I didn’t know at first that I would become somewhat of a fan but here I am now. Watching almost all of your reviews, and also the ads 😂. Anyway what you’re doing is great you have a niche food series. I’ve never seen in other food channels before. Your critics, you sharing knowledge about cooking and terminologies all in a very short video is enough to make me watch every upload! Keep it up 🎉 My only concern is that please remember to take care, remember to stay healthy and also eat healthy too.

Continue the great content Alderic! Underrated food channel in Singapore 😀😀😀. Can you share some tips on how to get "wokhei" at home? Using a flametorch?

thank you! flame torch is a good way, purposefully burning your food to mimic the smoke taste. the other way is to get a heavy wok that can hold a lot of heat. let the stove burner preheat the wok longer. that way you can maintain a high cooking temperature even after you add your ingredients in.

rotting and ageing is 2 different thing, rotting is without a controlled environment. dry ageing is a controlled environment, usually in a fridge full of fan and ventilation, drying the meat at a faster pace to prevent rotting to happen allow fermentation to take place that cause the enzyme to break down the protein in the meat and eventually creating glutamate acid that creates the umami flavour, same with cheese .

Felt like you brought a history based beef. Kudos to you. Anyway, people like me definitely will not appreciate, i don't like to overpay and eat while suffering for it. I rather eat at iSteak with sides on it, that will be fine.

Thanks again for the awesome review! Agree with you that dry aged steak is an acquired taste.... Really loved it that are the start you made sure we know which Wolfgang you went to.. for the non Steakhouse regulars.. it can be confusing... FYI .. I did an 'Alderic' at Oven and Baked chicken a week ago... Aka ordered chicken and nothing else 🤣🤣🤣🤣... Oooh.. I'm expressing the same comment as an earlier one where I'm surprised you didn't try the Porterhouse that Peter Luger is famous for.. but Who can say no to a 60 day dry aged Bone In Ribeye! 💪💪 Thanks again for the great content... Monday doesn't come fast enough for me every week 🤗🤗

I love wolfgang steakhouse. The porterhouse is the go to order. The ribeye fell abit short side by side.

Please try Bedrock next. their bread and butter with roasted garlic to start is great. have never been disappointed with their steaks as well.

I'm guessing the 30 day dry aged steak would give less of an intense flavour if you were looking for something not so strong tasting. but thanks Alderic for testing for all of us so we get to drool every Monday night!🤤

If you order sirloin cut it’s served on a sizzling plate with butter mixed with beef jus which Peter Luger calls it Vitamins….

I would assume from your description that it has so much flavors that the taste fatigue kick in way earlier than a regular steak or less day dry-aged. Maybe mixing it with some sides and stuff would make it a better experience to reduce the taste fatigue.

yeah for sure. no regular person would go into a steakhouse and not order sides or wine for that matter. but even this one steak was way over my budget.

Hi Alderic, I thought wolfgang steakhouse signature steak is their porterhouse? isn't it more fair to have their signature instead? (I know the porterhouse steak is more expensive🙃)

it is their calling card but I would argue that the 60 days ribeye might be even more of a signature since it's pretty hard to find a place that offers that. (bro I already put down $235 give chance pls)

i have bought several dry aged cuts myself , though not usda prime but the dry aged cuts are usually more on the dry side though not tough which was showcased in ur video, i generally feel its a miss overall for its hefty price point actually, but afterall , its a very niche preference , very few people will appreciate dry aging

I really should get a few dry aged cuts to play with in the kitchen. If it really compromises the juiciness, I think it's hard to justify the price against a fresh USDA prime.

@@Alderic. i think u definitely will hehe ,the price points aint that far fetched so it makes it still alright to get a couple for content.But nevertheless,on gugas food videos it seems to be otherwise so im not really sure >.< THOUGH i did sous vide my cuts to ensure a perfect cook to maintain that perfect juice retension but still nope:(

Coming from the industry 3pm is a transitional time between services . Many of the staffs are on break or haven't showed up for work yet. Not surprised to see only 1 staff member on the floor.

yeah they're one of the rare places that don't close for break after lunch. there were actually quite a few waiters/waitresses still, just didn't see the maitre'd.

You wouldn't know if they bought Choice instead of Prime. Beef prices increased massively (20-50%) recently... so restaurants had to increase prices or lower cost.

Im sorry but that was the worst presentation of a steak that I have ever seen. So much wrong I don't know where to start. Butter looked like they just cut a slice off a refrigerated stick. Ice cold butter with dry bread?? Under seasoned steak? What happened to the hot plate with sizzling butter that they usually serve the steak on?? Dry aged steak IS supposed to be more tender and just as juicy as a regular steak. Sides don't come with the steak? Last but not least, who cut that steak like that?? Surprised they didn't cut it into little cubes. As always, I do appreciate the content. Thank you! I subbed. I bet this channel does well.

no, I think requesting defeats the purpose. I second that and I certainly hope to be left alone for most of my meals. but for the average steakhouse customer, I would think that they will not want to be left alone.

I heard a few people tell me this but I can't be sure if it's that I'm not used to it or if they really mishandled the meat. It's not easy to find places with a 60-day dry age too. maybe I'll try to get a 60 day dry aged steak from a butcher to try it out myself.

Dry aged don’t stink, it gotta be mishandled piece of meat by staff or just the reviewer who first try but can’t tell a piece of good meat..is a shame many believe what reviewer say but really, go any butchery outlet n order a piece of dry aged, they don’t stink but smell hints of buttery creaminess..hence is prized steak. Dry aged is nothing new, is a first I heard someone say stink.
