You need high speed rpm for proper sharpening.

If you are referring to the temper of the steel, I sharpen them in stages to keep the heat down. It took four grinding sessions to get these edges all the way sharp. They were really abused. Now that I have the this jig, I can sharpen them more frequently and not let knives get so banged up. This allows for less metal removal and less heat.
