Today I would like to share a delicious recipe for a pastel green woodruff cake with you.
This heavenly cake doesn't need any baking time, but it is important to allow enough cooling time. It is therefore best to prepare it the day before so that it can soak perfectly.
The fresh woodruff leaves embedded in the jelly mirror are of course optional. However, they are a real eye-catcher you could use mint or orther Plants as well for the decoration ;)
You can also use other fillings at this point or leave them out completely, depending on your preference.
For the crust:
1 ¾ cups (200g) Margherite cookies or ladyfingers
9 tablespoons (130g) melted butter
For the cream:
1 ¼ cups (300g) English cream cheese
7 tablespoons (100g) low-fat quark
½ cup plus 1 tablespoon (130ml) water
2 cups (500ml) heavy cream
2 packets of woodruff flavored or other green jelly, for cooking
½ cup (100g) sugar
1 packet of vanilla sugar
Juice and zest of an untreated organic lemon
For the topping:
1 packet of woodruff flavored or some other green jelly, for cooking
⅓ cup (70g) sugar
1 ½ cups (350ml) water
Optional:
Fresh woodruff (optional and seasonal)
