Bon Appetit's Andrew Knowlton works a 24-hour shift at Waffle House. The first Waffle House diner opened in Atlanta, Georgia in 1955. Today, the chain restaurant has more than 1,700 locations in 25 states, mostly in the South. Waffle House is known for being open 24 hours a day, 365 days a year.
Knowlton's full day on the job starts a little before 7 AM. All Waffle House employees must be either clean-shaven or wear a beard guard, so Knowlton decides to shave the beard. Once Knowlton has his uniform, his on-the-job training an orientation begins. He gets to work making bacon, eggs, waffles, Texas toast, and hash browns.
During his down time, Knowlton sits down with Waffle House co-founder, Tom Forkner to learn more about the eatery's history.
One of the daily tasks at Waffle House for employees is mixing waffle batter using a power drill attached to a whisk. From there, Knowlton powers through the lunch shift into the evening hour dinner rush and well into late night.
As early morning approaches again, Knowlton has lost all track of time but has gained appreciation and admiration for all Waffle House employees.

I did 18 hours straight at Waffle House back in 1998. It was Christmas Day and there was nobody to show up for work except myself who had been on the job for a month, and one waitress. We managed to make it work, even though we were completely slammed. I have so much respect for these people.

I worked a 24 hour shift a couple weeks ago. My car smelled like WH for a good couple days and almost fell asleep while driving. Even after just 14 hours its hard to drive

In the UK employers aren't allowed to make you work longer than 14 hours per day. It's dangerous. Only police, fire brigade etc can work longer..or self employed.

They probably had someone drive him home. You can hear he still had his microphone attached so at the very least they would have needed to take him out of the car to remove it before he left. They just wanted a nice final shot.

I worked at Huddle House as a cook for a few months back when I was like 19 years old. I worked lunch and dinner (never breakfast, my manager knew i wasn't experienced enough for that insanity). It wasn't that bad of a job, i could easily handle about 5 different orders on the grill at once, but one calm evening, about 8pm. My older brother and my friend was up there chilling wit me and then a fleet of cars filled the parking lot up (12+ cars). It was a rush of family members dressed in black attire from a Funeral coming to eat. my brother and friend started laughing, while i was sweating bullets of anxiety knowing that it was about to be the death of me R.I.P. I was the only cook and the waitresses did not cook. I called my manager and told her the situation, she said "just do what you can, good luck". Every single set of eyes in the restaurant was on me (fuck). I handled most of the orders with ease, but when some waitresses write sloppy, ALL hell breaks loose throws you out of rythym quickly. So much noise, people gossiping, music in the ceiling, phone ringing off the hook, loud dishes clanking, custom food orders, waitresses saying they need this, they need that. Every sq. in. of the grille slap full of All kinds of food, 7 new tickets always appearing above your head, door bell ringing from MORE hungry fucking people coming in. There were people standing because ALL seats in the whole building were taken. ALL eyes on me (people confused, with only being 1 cook there, as well as people knowing that I was screwed). Cheapskate owners not willing to pay 2. It was any cooks worst nightmare, a fucking warzone. I had an applause from a few people with people cheering me on, and complimenting my neat plates and good food which gave me a bit more confidence. (good crowd of people). i was an organized cook by nature, neat sandwiches, drain oil off food before plating it, neatly sliced veggies. While I would smile at the customers from time to time, crack a quick joke with a waitress, The only true thing I kept thinking about was the clock because I knew my replacement cook was to show up at 9pm. And she was a veteran cook. After i knocked out all of the funeral crowd, cars still continued to pull up. The clock went 15 min past 9pm so we gave her a call and she said her car wouldn't start. (probably lying). I had to be the hero (again) and cover her shift, worked 16 hours straight for a low $8/hour. cleaned a shit load of dishes, scrubbed the grille shiny clean, restocked everything, so much cleaning all around afterwards. Dead tired, I quit after my shift ended. Told them straight up, that I wasn't coming back. Wasnt gonna wait around for a potential .50 cent raise later or anymore of that place. That night ruined my nerves for cooking jobs. i havent had one since then. The money did not equal the labor/stress. I have a lot of respect for people who can handle it though while still putting out quality food in a timely matter. Don't matter how quick you are, if the plate looks messy, food don't taste good or is cold, you aren't worth shit as a cook remember that. With all being said, it was an experience that I'll always remember, and I still enjoy to cook as a passionate hobby.

honestly when the people are good, and the work is enjoyable, working long shifts like this goes by so fast and can actually be fun?? Like working 8 or 9 hours with no one there is terrible, but once people are there it goes by so fast

As a former grill Op at a waffle house in Northern Louisiana i have a couple of issues with this. 1. He got a break (there are no breaks at the waffle house unless you smoke.) 2. He was sitting waiting during the shift 3. He used a drill whisk to make batter (its all in the forearm burn) 4. The waitresses were nice when they asked for their food a second time 5. Empty seats during a rush? 6. Why aint he cleaning? Hes gotta brush the floor 7. He got off on time??????????????? otherwise pretty accurate. Hes lucky he got out of there without a meth addiction.

I went to my local one this morning and they were talking about how things might get rough for them and my waitress was worried that she might have a job soon. Waffle House workers keep the world turning. They deserve to get paid good wages and benefits. People in food service deserve more respect.

No lie. I LOVE "The Waffle House". I grew up poor in rural Arkansas and we used to go to our local Waffle House for a treat. My favorite item was the salad with chilli and ranch dressing. And the pecan waffle. And the patty melt burger with hash browns and chili on it. And the hash browns. Scattered, Smothered, Chunked, Topped, and Diced. Jeez. No wonder I was a fat kid.

Make sure you ask your server to stir the chili or gravy before they put it on your food. Some don't care and will get you half a ladle of dried top layer chili

fact that could save your life: Waffle houses are some of the best places to go during nuclear war, zombie apocalypse, a large scale war, and any natural disaster because waffle houses are in fact stocked with extra food and water because the CEO of the Waffle house company says each Waffle house must have extra food and water. Oh not to mention we are open 365 no matter the weather, date or time if a hurricane happens the waffle house will be open the next day, I have been told there is a team or they will get a team to drive down there and get the waffle house in working condition unless it is not standing or is under water then they will find another waffle house to fix to help that area.

Even when I go to a waffle house where they dont care about what food they are putting out, it still tastes better than a lot of other places. Cleanliness is not a part of the Waffle House experience though, sadly.

Waffle House was the first thing I saw after leaving the airport my first time in the US (Dallas) and I insisted on going there, having no actual idea what it was. Now it's a thing my dad and I do every time I visit. They even sold me a coffee mug!

Actually you're not required to wear gloves in the kitchen at food establishments based on US law. The only time you need to wear gloves is if your handling raw meat and switching between multiple stations. Otherwise you are allowed to wash your hands every time between stations without gloves. I worked at Five Guys and we had to wear gloves based on company policy. Some restaurants, like Waffle House may not require it since it's up to the company to decide yes and pay extra for disposable gloves or no.

If you find a good waffle house their food is really quite good. Love the pecan waffles and the smothered hash browns.
