It's quite tasty if harvested outside of the rut. Not as tender as a calf or yearling, but nonetheless very tasty. Stags only start to taste worse if they get really old (which tends to make the meat rather tough) or if you shoot them in the rut (which gives them a rather "gamy" aroma). But this stag doesn't look that old or to be currently in the rut.

So like it or not, this "not taking other life" when it comes to animal is just another pseudo-religious nonsense. Besides this way there is no difference between deer and rat, pigeon or mosquito.
