The city of Wuyishan locates in the northwest of Fujian Province. This city is not only the birthplace of rock tea (oolong tea) and world’s renowned black tea, but also a home to a world cultural and natural heritage. Depending on how it’s processed, tea is classified into six major types, namely green, yellow, white, black, oolong and dark. Wuyi rock tea is a special oolong variety, noted for its roasted flavor and floral, fruity aroma. The processing involves more than ten steps, from the harvesting and withering, to twisting and drying. Having been inherited and developed over many centuries, the technique of producing Wuyi rock tea has been listed as part of the nation’s intangible cultural heritage.
