He doesn't. He quite frequently takes his Book of Rhymes into the booth. He even raps about it. As far as eventually remembering the song. There's a process called layering, where he quite literally raps the same thing over and over again. If you listen closely you can hear the different layers.

Notice the flow patterns in this track, the first two verses Em uses a more modern/trap style flow, however he does so in an incredibly technical way with wordplay, entendres etc in every line. It’s almost a mocking tone, he can do this style with ease and way better. Then after the piano build up he goes off, and resorts to a more typical Eminem style real hip hop flow. Notice he repeats the first lines of the song, showing he can do it either way. And he just goes the fuck off. He’s proving a point, he can outrap literally anyone. “Get your whole squad, send the task force in” doesn’t matter, he won’t be out rapped. “Are you retards slow or dense?” There’s no argument.
