@Georgio476 - Whoever is insulted is whoever chooses to be insulted no matter the reason is, now as well as there is Colombian way of eating Arepa and Venezuelan way I guess no Colombian or Venezuelan gets insulted, We in Israel know very well that Hummus is Lebanese but there is an Israeli way to eat it so if the term "Israeli Hummus " insults somebody it will probably be insulted by nonmatter what, about Falaffel , did you know Falaffel is not Lebanese but Egyptian ? and happends to be one of most popular street foods in Israel and there is an Israeli way to eat it so there is an "Israeli Falaffel" - there are some other dishes that are oriental by origin and not eaten anywhere but Israel like "Sabbih" so it is considered Israeli (originated by Jews from Iraq and was unknown by muslim arabs in Iraq) - Usually whoever likes in a political sense to delegitimize Israel says that all those foods (Hummus, Falafel, Tahini, pita, Sabih )are Palestinian - that is the origin of the insult issues when it goes to cultural or gastronomic matters. So all that we have to fight for is just to be aware of that and be able to explain it. About all that further on you will find comments from insulted Palestinians or Pro Palestinians just to understand my point of view.

I only talked about hummus and falafel (and I see your point on the claims they are Egyptian), but based on the academical and historical resources I have access to, I claim they are Lebanese (please share any other resource you might have). Variations do actually allow for identity appropriation, with Falafel for example whether the paste is made of chickpeas only or fava beans are added makes a difference. But with Hummus I really don’t see any room for variation. As for traditional Jewish dishes, it’s up to Israel and its different Jewish communities to culturally negotiate whether they would accept to label these dishes as Israeli or not, it’s not up to me to say, nor the general Israeli populace. For example, if Iraqi Jews in Israel (proprietors of their own cultural heritage) choose to assimilate it with the modern Israeli state's culture they are free to do so, but they also have the right to claim it as an independent heritage that them and only them have ownership to.
