Pour over coffee is an absolute favourite, but I went to a coffee seminar in Tokyo recently where I learned that the paper filter can have a BIG effect on the flavour of your coffee.

As my "entry level" bambino went to the scrap yard after 11 months, I've gone back to the French press & Moka pot. But thought I might have a go with pour overs, any recommendations on the "kit" required would be appreciated...

First of all, choose a dripper. There are a ridiculous amount of them out there, but the classics are: V60, melita, chemex and kalita. Get whatever fits your budget, looks nice and is available (they all create slightly different coffee but they all can make really good coffee), also consider the availability of filters, melita style filter you can find in any grocery store and most caffes will have V60 papers, but kalita and chemex might be harder to find, it all depends on location. Don't worry too much about material, everything from plastic to metal to ceramic is all good. Also consider what is called "steep and release" drippers (clever dripper, uses melita filters or hario switch, uses v60 papers), they are super easy, more forgiving in grind size and you don't even benefit that much with using a fancy kettle. Now, when you have chosen the dripper you need 3 additional things: grinder, something to messure coffee and water with and a kettle. Not sure where you are with a grinder but I'll help you out if you need it. I prefere scales to messure with, a good one with 0.1g accuracy is preferred but not needed. For kettles, I really do recommend getting a gooseneck kettle, these give you a lot more control, there are really cheap ones and very expensive ones out there, pick whatever fits your budget (with that said, I made plenty of decent pourovers with a normal kettle too). That is all you need to get started

I think the difference between rippled filters and conical is not the fact that they are rippled, but that they are flat bottomed. Is the same reasons why conical and flat bottom drippers have different taste profiles

I found that unbleached paper (brown one) somehow added a bit of muddiness into the final cup compared to the white one. Might just be me, tho.

I'm not sure how much impact might be the reality of the paper, or expectations. I've never noticed the difference in brown or white paper filters, but it's kinda hard to test, right?

I have a four cup small coffee maker the reusable coffee filter is no good can I use paper coffee filters in the coffee maker and if I can what number do I use
@homecafecharlie
@homecafecharlie 2 жыл бұрын
Not sure what you mean by what number here. I think you should be able to use any filter that fits. They aren't expensive so experiment with different filters with the same coffee till you find one you prefer the taste of

I hope there is a thick ripple filter because im avoiding the oil properties in coffee and maintaining my cholesterol level.
@homecafecharlie
@homecafecharlie 2 жыл бұрын
Probably missing the wood for the trees there. There's almost no cholesterol in coffee. Just eat one fewer egg per month and you'll have the same effect 😉

@@homecafecharlie ah yeah there is no cholesterol but i read somewhere that the oil in coffee forgot the name but it affects LDL and total cholesterol level as per 1000 participants that drink unfiltered coffee. Which i did for the last 8 years i guess maybe its the reason my cholesterol is a little higher now even i eat healthy excluding this pandemic lol hard to do the usual workouts inside the house.

i'm confused by your claim that "the only difference is the paper filter" in the clip of you drinking from 2 extremely different cups at the 2:30 mark. my experience tells me that cup size and shape plays an extremely significant role in taste perception. i'm also not sure about a claim you made towards the beginning of the video, that "conical filters... were increasing the acidity of coffee in the cup, whereas these ripple filters allow the coffee to more through a lot more quickly and therefore don't extract as much acidity". everything i've learned about coffee would suggest that coffee extracting slowly will extract MORE, but it's UNDERextracted coffee that contains unpleasant levels of acidity. are you maybe confusing bitterness with acidity, or are you misinterpreting taste based on perceptions not reflected by the coffee itself but by the discrepancy in cups you used to compare?
@homecafecharlie
@homecafecharlie Жыл бұрын
Good point about the cups, I should have considered that. The coffee definitely has much less acidity in the wave filter papers, but perhaps my hypothesis is backwards about the reason why. Thanks for letting me know 😉
