💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Karen has been working for Hercules Candy since the twins (Craig and Cara) were about 6 months old and everybody else is a new recruit. Don’t forget to subscribe and hit the 🔔 for more videos!

I work in a kitchen and it is preferred by the state that you wash your hands in between everything instead of wearing and changing gloves.

ive worked in kitchens and gloves were never really worn. You wash your hands constantly though, wearing gloves doesnt mean the outside of your gloves arent dirty.

Also in most kitchens the food being touched is cooked so you don’t need to wear gloves for most of that handling since it’s getting cooked. If not cooked you need gloves but then you change them when you’re done bc yeah the outside of the gloves are now dirty.

100% truth Gloves protect the wearer not the customer. Changing gloves as much as necessary is an enormous garbage nightmare. I use gloves to handle raw meat or clean bathrooms.

Perspiration is still a thing, and thats disgusting either way. Bare hands should never be used for preparing food for someone else

I was a professional Chef for 23 yrs. The pastry girls wore gloves. I worked 'hot side' and made entree plates. I didn't wear gloves, but everything was hot. I used clamshells (tongs). All I know for sure is food service Band-Aids are blue so they stand out if you lose one. Because (drum roll please) there is no blue food. Even blueberries are purple. Unless gloves are changed often, bare hands are probably cleaner. I seen people use the same gloves all day and that cant be very clean.

New video idea. Do shop tour comparison now and when they first started in the new place. Would be amazing to see and hear what Terry and Steve think how well the renovation went and what would they do differently now. Watched some of those old new shop videos and how empty it was. Would be interesting to see how well original plans for the place worked and what all new features have come to the store. Also conversation about how business has evolved in the new shop, would be amazing.

I worked in a factory that broke and inspected eggs for drying, we weren't allowed to wear gloves, we had to wash our hands if we got egg on them. The idea was you'd never really be able to tell if your gloves were clean, but you can feel if your hands were clean.

To save time, could you make a naked Peppermint Patty since it is all being covered with chocolate at the end? Maybe just use the "chocolate glue" like Terry is doing to keep the patties in place before the whole thing is covered by hand? Same with the Peanut Butter Cups. Could you make a naked Peanut Butter Cream instead of using a PB Patty?

Another flavour for your pretzel is cover the pretzel with caramel and then cover with chocolate! You can top with chips or even better would be honeycomb

I like anything with caramel. Maybe you could use the smaller pretzels dip them in caramel and use the “fixed” enrober to cover in chocolate. I know you would have to throw away all the starch you would use, but could be fun to try when you know you’re getting ready to change your starch over. Too bad you couldn’t crush the pretzels, put some in the molds you use to make your creams. Then cover with Carmel using the cream dropper then cover in chocolate.

i do a ritz cracker with peanut butter on it and another ritz on top and cover it with the melted chocolate almond bark, dip them in

I want to take only the oreo cookies and remove the filling. Just one cookie in the bottom and one on top, of that mint patty. Dip in dark chocolate. Blending the oreo filling with drops of mint - lastly pipe the now flavoured filling neatly on top of the chocolate covered oreo mint patty cookie.. and dip that piped top also in chocolate. Crushed mint candy canes on top. Yum.

Wearing gloves in restaurants actually tends to lead to "dirtier" food, there's been tons of studies on this effect. In essence gloves give the "feeling" of cleanliness, instead of rigorous hand washing protocols. All gloves breed bacteria as good as your hands, but don't wash clean with soap and water the same way your hands do. So if the restaurant wears gloves they need to be more rigorous about constant glove changes then just a handwashing station and regular washings.

Everytime I watch one of these, I love the rapport between all of you. Our local Pittsburgh candy makers, Sarris & Betsy Ann have delicious products. But all of you make me think Hercules has to be better - just because of your attitudes. I found you by searching for the Buffalo sponge candy. Do you make that as well? I made it ONCE. Way too much work to make at home. Just like, brigadeirios, pignoli nut cookies, and macarons. Once was enough for me to appreciate the professionals. But it is the community shown here that takes you over the top! Going to your website for all my holiday gifts!

Never comment, till now, but LOVE your channel guys. What about using a tall more narrow container and dipping the snack clubs in that? As opposed to Cooper having to hand-cover.

I found a regional confectionery on vacation, I searched your videos and your store with no results. I bring you the "Irish Potato" it may very well be my favorite candy ever. I'm not a big sweets guy and can only eat one with a strong cup of coffee but oh my is that a treat. Shout out to "The Original Fudge Kitchen" I thought the "Handmade Irish Potato" sign was a gag, I asked about it and it changed my life. They seem pretty simple, I have tried and failed to make them myself. If you wouldn't mind I would love to see you take a crack at it.

I used to make chocolate covered pretzel rods, I used to fill a glass up with the melted chocolate and just dip the pretzel rod in there, made it easy 😊

Maybe cause they have to temper it? They have to stir and mix the chocolate in their hand so that it looks glossy and the oils don't create lines.

When I owned and operated a take-out with pizza. We usually wore gloves as much as we could. Specially with all the different kinds of food we worked with. Never want cross contaminate the foods we cooked. Pizzas. Sub's. Burgers. Poutines. Donairs fish,, chicken dinners etc...

Never ask a service tech which restaurant kitchens are buggy and dirty... My hubby told us some stories! Yes, kitchen staff are supposed to wear gloves around food. Our daughter was a sous chef and wore gloves with certain food prep (ie jalapenos, tomatoes) but since their kitchen got excellent scores, they were able to continue with what they were doing. Other restaurants would come for 'field trips' to see the kitchen!!!

Gloves are required in restaurants for ready to eat items.. you can handle things with out gloves before cooking.

I love plastic bags from the grocery store because i have kids in diapers and we use them until a poopy one gets in and throw them right away. Our house smells so much better then those cans. But as soon as possible we are going reusable bags or paper.

The thing about wearing gloves and Im surprised the crew don't know this, is that they aren't actually cleaner than bare hands. Gloves aren't inherently clean and studies have shown that wearing gloves cause people to be alot more relaxed about what they touch and how they cross contaminate becuase people forget to change their gloves and will often just assume that they're hands are clean because they're wearing gloves. For example when cooper changed his gloves, upon realising that there was only one glove left in the box he then picked it up and handled the box with both his gloved and ungloved hand, that glove is now contaminated with everything his bare hand has touched and what every other bare hand that has touched it has touched, does it matter though? Assuming everyone cleans their hands, then no probably not. This the same for chefs preparing food in restaurants, gloves are a hinderance to chefs more often than not. You're working with sharp knives, high heat and acids all of which are a bad time when working with gloves on so instead every kitchen is supposed to be fitted with dedicated hand washing stations so that the chefs can constantly wash their hands as they're working. Sorry for the lecture but this is a really important topic in safe food handling practices and there's a lot more to the topic as well.

I've seen Americans talk about cooking without gloves in a shocked manner before and I don't get it. As long as the cooks wash their hands, gloves aren't needed.

Well if you're changing your gloves you can easily wash your hands, gloves give people a false sense of clean as you're suppose to wash hands between glove changes and hardly anyone does, which creates a breading ground for bacteria as gloves trap Moisture... Even Cooper didn't do it properly... Took off his old gloves, didn't wash his hands between then He put on a glove, grabbed the empty box with his gloved hand, put on another glove from another box.. And used his gloved hand to roll up his sleeve... Then put his now contaminated gloved hands on the food he was making... Gloves are a false sense of security

SUGGESTION: 18:40 Instead of hand why not use some type of spatula to evenly spread out stuff? And why dont make or buy like some type of drainig like bowl with small draining holes and then use cutler or something to sip the white cocolate in it and it will slowly start draining onto the dark chocolate.No need to waste gloves so mucha d no ned to like use so much physical work just a spatula or flat sqare thingy that chocolate makers use and then use some draining bowl with small holes or you custom make it.Then you have teh needed thing that will not only make less work but be maybe more efficient and slightly faster .

Why not put the peppermint cream in between two oreos, saves you time not having to enrobe them first, they get plenty of chocolate when they get hand covered. Maybe it's because then you can't stick the cream to the two oreos with the "glue"..?
