In this video, I used a thick-cut short rib cut of beef. This meat comes from a strip of ribs between the third and fourth rib of a cow and is cut across the bone for extra flavor. In the United States, it can be described as a thick-cut Korean short rib or flanken rib. In my opinion, this cut is the best in terms of flavor and texture for this dish.
