I was just hired to clad a brick chimney with aluminum panels. How do you propose lathing the block with wood so I can screw the clips?

I would first wrap the Block with the membrane and then I would attach the lathe with concrete screw or anchor... Then attached your panels to that

If you want a cleaner look then run tabs when you’re going into miters and then cover it with the next piece. You’ll still be able to get the fascia metal on and you’ll have a clean and professional look. I’d also recommend mitering the nailer when doing so that there isn’t exposed wood(regardless if you’re going to waterproof over the flashing). I know that it doesn’t matter if it’s up high but if it was visible then these flashings would be unacceptable for their appearance at any company I’ve worked for. Work on mitering those drip edges and getting cleaner cuts with the snips and you’ll be solid. My constructive criticism from a brother in the trade for 6 years.
