Oh la la! Could you please do a tutorial on pate de fruits? Maybe a raspberry or blood orange one that uses homemade puree? You could tell us how to make the puree also, because so many pastry recipes call for sugar or corn syrup/glucose added to the puree - they don't seem to understand that we're making something in which sugar is added (pate de fruit) later on in the recipe.
