I like that part where guy with chrom/gray ball and a chart is walking aproximately the same speed and path as an actor and camera is moving in a similar way. I like it because I was while not being a VFX artist buy researching it I was wondering who do they take light reference for cases when actor is moving through everchanging lighting conditions. In this case there is no inserted CGI object that would need to match the lighting at every different place, but it most likely used to just for reference. But when There IS a CG character that is walking along, for example - how would this be done in terms of capturing HRDI. Would it be taken at every important step of condition changing and then extrapolated? That I haven't seen answer yet.

For character work, they usually have a stand in prop along with HDRI ball and other references. A furry animal for example would have a furry prop as reference. Bigger budget would have a 3d scan of the set for use as reference, proximity contact, matchmoving etc.
