材料:
雞翼4磅
調味料:
冰糖
蠔油
生粉
處理:
1. 雞翼用清水解凍。
2. 倒去水分。
3. 沖洗乾淨,擎乾水。
4. 用叉預備蔥絲。
5. 洗乾淨蔥絲,用作上碟放在雞翼上用。
6. 預備冰糖水
a. 煲滾200毫升水
b. 隨個人口味,加入適量冰糖。
c. 冰糖完全溶在水中,備用。
7. 雞翼已擎乾水,加入3湯匙生粉,攪勻。
烹調:
1. 大火煮熱400毫升油。
2. 逐隻雞翼放落油炸。
3. 轉至中火炸,3分鐘後反轉再炸另一面。
4. 如果分開2次炸,將第1次炸好的雞翼回鑊炸熱一點,熄火,將鑊內的油全部倒起。
5. 放蠔油落鑊,加入大約100毫升冰糖水。
6. 開中火,兜勻雞翼2分鐘,直至所有冰糖水完全被雞翼吸收,上碟。
7. 蔥絲放在雞翼上面,完成。
200 Marks Chicken Wings:
Ingredients:
Chicken wings 4 lbs
Seasoning:
Rock sugar
Oyster sauce
Tapioca starch
Preparation:
1. Defrost the chicken wings with tap water.
2. Pour out the water
3. Rinse thoroughly, hang dry.
4. Prepare the green onion with a fork.
5. Rinse the green onion for serving up.
6. Prepare rock sugar syrup:
a. Boil up 200ml water.
b. Put appropriate amount of rock sugar in the boiled up water.
c. Put in a bowl when rock sugar is totally melted in water.
7. Add 3 tbsp tapioca starch after chicken wings have been hung dry. Mix well.
Steps:
1. Boil up 400ml oil with high flame.
2. Deep fry chicken wings in wok carefully.
3. Turn to medium flame , flip over the wings after they have been deep fried for 3 minutes.
4. If the wings deep frying in two rounds, put wings of first round to wok, deep fry for 2 minutes more in order to make sure all the wings are hot enough. Turn off the flame, pour out the oil.
5. The chicken wings are retained in wok, add 100ml of rock sugar syrup as well.
6. Turn to medium flame , stir chicken wings slowly for 2 minutes until they have been mixed well and syrup has been absorbed into chicken wings. Put all the wings on plate.
7. Place the green onion on top. Serve.
