For anyone wondering cream of tartar in this application is to prevent sugar crystals from forming. Zucchini also make excellent pineapple

Maybe adding lemon would give it that tartness too that pie apples have.

Apple cider vinegar 1\4 cup added will help with giving the apple juice the little tang and really make for good pie filling .Looks good !

Years ago a woman I worked with brought in koolaid zuchinni jam it tasted like strawberries and was really good, nice thing is you can use any flavor you can find made with the non-sweetened koolaid

Awesome! With what I have been seeing & reading lately ... Zucchini may be a veggie to have an abundance of. I've used it as the veggie it is in different ways & also have used it a a low carb spaghetti noodle (zoodles) but never thought of making mock pineapple, Zapple (Pie Filling) or mock Pickle/relishes I've seen made. I'm going to up my game & start using zucchini to its full potential. Thanks for sharing Bev ... can't wait to see when you make a pie with it!

I raw pack my squash and put the juice in. Then sun lemon juice and water-bath it. I don't cook it first.

btw.. when I am filling my canning jars, I always put the jar in a big pasta bowl, so I catch any spillage.. make for easier clean up and the phone did a great job of recording.. and great pictures

I make mock apple pie filling but I freeze mine. I did make Mock pineapple with zucchini this year. I did a crushed version.

A little lemon juice would make it safer to boil bath it. Zucchini is not high in acid. Looks yummy.

You know i love teasing you about the zucchini! Zucchini is just a filler and will take on the taste of just about anything! I've made the pineapple zucchini and just wish i could of found pineapple juice in a bottle instead of a can. Kindof has a tin taste to it!

Bev, I like to make gummy “candy” with fruit juices and chunks of zucchini, simmer in each juice then dehydrate and they are so yummy!

Yes! I win! Lol. Long story short, you guys call it 'canning', and we 'Old Timers', call it 'bottling'. I have expended quite a lot of mirth pointing out the difference. Mrs. V, you used the term, Bottling, and I feel quite vindicated! Lol. Oh, and don't worry about your hair or looks, babe. We're friends. Nobody notices! Lol.
