My question was based on the fact that I love these "angel hair" products, as kataifi noodles are also called, but unfortunately they are not easy to buy here in Slovakia, so I thought I would try to make them myself. From the looks of it, buying that special high gluten flour isn't too promising either... I'll try using regular plain flour and see how that goes.
