I've been chasing flavor for 35+ years. I grew up in GA - loved the pork there. Then I had Black's BBQ in Lockhart in 1988. Then I had Santa Maria tri-tip in California. So, I chased it. It started with a weber kettle and pork shoulder. Made my own sauce and rubs. I've fed crowds and put allot smiles on people's faces. When I heard about a place in Austin where people camped out for BBQ, I thought. "this ain't right." There's so much BS about it out there and Facebook market place is full of hardly used smokers. I do believe there's allot of hype and craziness out there. Meanwhile, Black's is still rolling, doing the same thing they were doing when I ate there in 1988. Have fun with all the cool stuff - nothing wrong with that, but if you really want to do your own thing you gotta step back before the Franklin era and see what was out there before him. Study that and you'll make great food with your own recipes. It helps to make allot of notes. I still go back to notes from a long time ago.

Great interview… once it started. I get some episodes it’s just the boys and y’all can bs around all day, but when you have a guest, you gotta respect their time at least a little. My dive into bbq has really ramped up over the past year. What I've realized is exactly what he's saying in the video. All those rules don't mean shit for the most part. My briskets come out fantastic the way I do them. I'm all about the most efficient way to produce something without sacrificing the end product, and that's exactly what I've been able to accomplish through experimentation. Because of this, I will never slave over a pit for twelve to fourteen hours again, ever.

Yo this is all GOOD advice. The powers that be have made it impossible. College is a good idea, but not when it's been turned into a debt slave racket and every blue hair with room temperature IQ can get a gender studies degree. The housing market has fucked us. Having your own car is an adult grown up thing to do. All of this advice is good advice, but our economy, culture, and values are all decimated purposefully and deliberately to break down this country and rebuild it for the New World.
