You are not getting much smoke in to pork if you have your kamado at 170C. Need it way way lower.

This is on a whole other level. Only those who have really mastered their culinary skills will know what this is all about. With the added bonus of being cooked on a open fire whilst being smoked infused. This is Goat Curry at it's finest. In Jamaica 🇯🇲 when Curry Goat is cooked using pimento berries and pimento wood for the log fire, words cannot express how truly great it is. Infact all over the Caribbean they have their own methods of preparation and cooking that brings outstanding results. Goat curry originated from the mother land India 🇮🇳, other than the originators 🇮🇳 the best Interpretations of this dish can be found in places such as Guyana 🇬🇾, Trinidad and Tobago 🇹🇹, where you'll find a fusion of Diasporan (African) and Indian influences.
