Great question. Salt requires moisture to transfer its properties. As both salt and rice are dried products the salt acts purely as a cooking medium. Sand works just as fine, instead of salt. In rural India it is done with clean and washed sand. This way it won't have salty taste.

If you set the sieve over the bowl, you can empty the pan into it all at once. Then, shake the salt out over the pan, empty the salt from the bowl into the pan, and dump the rice into the bowl.

Converted or parboiled rice is common, here in south MS’sippi and Louisiana. It’s used in Jambalaya or Dirty Rice. It doesn’t get gummy. Zaterains is the most popular brand. A Cajun or Creole name.

Puffed rice is similar but not the same. Puffed rice uses the build-up of steam inside the rice to expand it. They are soft and tasty, but not like rice Krispies. Rice Krispies are a "toasted ' puffed grain. The salt process in the video also toasts the rice, making it taste a lot like rice Krispies rather than Puffed rice.
