No structural support in the concrete??? This is a guide on how to make things that wont last. Concrete does not have the strength to hold weight unless you place rebar or some other solid support structure inside it.

It would be well worth building a simple wooden frame for the concrete blocks. Then you can get clean and straight edges which will make them fit together much better and be easier to build with. If you add a bottom to the frame you can also stack them with some spacers so you can make many without using up a ton of floor space. The bag trick is still a good idea to prevent messing up the molds, and it keeps the concrete wet for the curing time without need for watering, which helps final strength a lot. You can make non-stick molds that don't need bags with melamine laminated plates and a little release agent for even more presice forming - but then the cost start to not be trivial anymore.
