For many this is the difference between starting and not starting. If you focus on making great main dishes and dialing in how to ensure they are excellent, you can build from there. This isn’t a low hanging fruit strategy. This is just a practical and smart way to get started.

Yep, boiling water. Not on the foot itself though. Wrap the food good in foil, then pour it on a towel wrapped around it. The towel will hold the water and the cooler will keep the heat in.

I have a traeger with cheapo blankets, i smoke all year long with nothing covering the controls, I am in Canada amd have smoked a turkey on xmas in a snow storm

Carbon from the smoke conducts electricity. The chip in the controller collects carbon and water underneath on humid days sometimes. So if the controller goes on the fritz, you want open ihe controller up and clean it out with isopropyl alcohol and a cotton swab. After 15 years, I had to take the chip off and clean it and then resolder the chip to make it work again.

Just bought one from a friend it hasn’t been used in a year wanted to clean it but everyone say only clean racks the everything else adds flavor but I really want to clean it and start fresh should I just scrap it or use baking soda or apple cider vinegar with water?? Plz help

I would just scrape it with a spatula then run it max temp for 20-30 minutes.

I have an outside power outlet with a flip down cover, and put a cord end on the smoker that lets it be plugged in with the cover closed. Because it's a GFCI outlet (the kind with the reset button) I'm not too worried about the smoker being electrified. As far as protecting the electronics, the brains of mine are on top, so I make a small glass, wood, and glue cover, just to keep the water off the controls. The heater and such are well protected inside the unit, so the buttons and the control circuit are the part I'm worried about. The cover just sits on top - maybe not secure enough in high winds, so I put a tarp hood over the whole unit when not in use.

I think the issue was from the type of sausage. We had never tried it before. I wanted to list accurate results, so that’s what why I marked it as I did. This was more of an experiment for me.

Sorry for the super late reply, just saw this. You’re right? If you can make sides with good margin, it’s where profit lives. This is more for those starting out. Sometimes the first few catering gigs are overwhelming because we try to make everything. Buying some sides can really help make things more manageable.

Yep. I always catered on the side, so I needed to consider time more than anything else. As I built my recipes for the sides I offered, I tried to design dishes that let me do most of the work the day before, or too minimal day of work.

I would test it out before trusting it for an event, but it should work. Really all you are doing is adding heat to the cooler to help keep the temperature high for a sustained period of time. I’d love to know if you try it.

85 here today and I did country style ribs today, ribeyes tomorrow and bacon swiss mushroom burgers Saturday. Love my 89 dollar weber lol. Going to try your Mac and cheese recipe this weekend. Looked delish. In SW Fl., land of the tourists.

When my daughter was in high school, I would BBQ for large fund raising events of 150-200 people. In an effort to save money, I would by shop at Smart and Final and purchase untrimmed tri tip. After a couple of times, I found that I was trimming quite a bit of fat off and when you tabulated up the price, It was close to purchasing "trimmed" tri tip at Costco cryovac bulk bags. I was spending a few hours to trim up 30 + tri tips. My time was better spent on prepping the side dishes.

Bought this journal a while back and it's been one of the best additions to our adventure into smoking. This is my go-to smoked mac & cheese recipe. I add bacon and pickles jalapenos and top with crushed extra-toasty cheez-its before smoking.

Iv done this with a brisket for 10 hours...I Never opened it...My queation is, will 8-10 houts be ok, for Ribs?
