You scored the duck breast too deep.im sorry but this breast is horrendously overcooked.nowhere near medium rare.you never transfer meat into a hot pan to allow it to rest.this is basic knowledge amongst professional chefs. Sauce looks ok though id suggest juicing it through a seive to avoid pips and too much pulp and membrane. Just a couple of pointers though.nice effort overall

I added the stock too the pan after transferring the chicken so I could Deglaze the pan so nothing went to waste. I'm a 78 year old single gent who was taught by my mother to cook and she was taught by her mum who worked in a Country Estate as head cook. in Gloucestershire England So a good grounding at the age of 15 but now disabled I generally go for simple easy food.
