i think its because the game stores the level counter in one byte one byte can hold numbers 1 - 256

Because the game's code can't handle values bigger than 255. So it does not know what to do, and basically start over again at level 1

This might happen because the game is an 8-bit game and it can handle 8 bit integer witch is 256

Yes, that is right. The game does not know how to handle the 256 value, so it goes back to 0, which is level 1

Level 1 after Level 256 is LITERALLY what Super Mario Bros. did in the game after beating Bowser. Power Pellets don't work anymore like goombas were changed to beetles.

Fun Fact: The game "PacMan 256" for mobile was inspired on this stage but you die by the glitch if you touch it including it's 3D and the glitch chases you into endless PacMan levels.

Why did the Genesis version feel like it was lower resolution than the arcade? Isn't the arcade approx 368x240 or something similar?

I may be wrong, but, from what I know the arcade system has a resolution of 384 × 224, while the Genesis has a resolution of 320x 224

I always love seeing the Spectrum ports. With it's really unique but limited graphics style and color pallet, it's really interesting to see how developers worked that into the port.

The NES version is the prequel for Ghouls 'n Ghosts right? Ghosts 'n Goblins. That is why I didn't include in the video

Wow. I loved playing this game as a kid, with the native american stage as my favorite because of the music. My brother would occasionally join in with him picking the cowboy. I can't believe how good I had to get in order to complete the game, but hell I managed to do it. Beautiful game, wonderful memories. Thank you for this.
