I don't know where I get these crazy ideas from, but I was thinking, why not cook up some brown rice, fix a bechamel sauce (no nutmeg), add freshly squeezed lemon juice and shredded mozzarella. Then get some large bell peppers and stuff them. Top with more cheese and bake them. You know the rest. A new take on stuffed peppers!

GORGEOUS! And so easy. I tried Ethiopian food while living in Côte d’Ivoire (Western Africa) then while living in the Middle East. I miss this cuisine dearly and have been wanting to recreate it in my Indian kitchen. I’m going to try this out!
