It’s actually really common practice in BBQ. There is a point where meat no longer can absorb smoke. Wrapping in foil or butcher paper can help increase tenderness and cooking speed. Like braising

Only thing I could see making it better is instead of cutting into strips make into thin cutlets and wrap the chicken cutlet around the pickle then wrap it in bacon

I know its a heated debate, but boiling your crab sucks all the flavor out. Steam to reheat and douse em in the seasoning. That's my prefered way, but to each their own.

Yeah that comment proved you aren’t. Too much seasoning when cooking over open fire can cause burning. Second a Salmuera was used which is basically like brining so more flavor is being added when it’s basted. Third it’s being put into a consume that is LOADED with seasonings. So yes a light seasoning on the lamb is necessary
