Growing up Steve the salad my mom served ALWAYS had sliced black olives in it. In fact it was almost identical to your way. I still make it that way. I only use about half a cup mayonnaise for that dry consistency. Your friend is wrong. This way gets me many compliments. Also I make macaroni salad the same way.

Steve, I like your potato salad receipt but with less olives and you need to add a little cilantro. The cilantro really adds some flavor. Living in the southwest everything gets a little cilantro.

Hey bud, I agree making your own potato salad this is way better than anything store-bought that's drowned in mayonnaise. I make a very good macaroni salad which has some similar ingredients to your potato salad. I'm curious to know what type of pickles do you use? I use sweet relish in my macaroni salad and it's incredible. It is time consuming to make I just made 2 big bowls on Thursday and all of my neighbors loved it. It's one of my good friends mother's recipes that she shared before she passed away. We always think about her when I make the macaroni Salad. I've never done potato before but I'm going to try it next time.

Have you checked to see if you have GERD (a type of acid reflux)? it's a condition where you can have heartburn and burns up your esophagus. There's a specific bacteria called E. pylori Bacteria that can overproduce acid in your stomach, which is something I was born with. Cold water can set off my GERD and I have to take Prilosec to keep it under control

I tend to make potato and macaroni salad pretty similarly. Mayo, mustard, white vinegar, sugar, eggs, celery and I always add a can of tuna or chicken, and that really makes it a meal.

I have acid reflux problem. I have found the earlier i eat my main meal of the day, the better...usually by 3 p.m. I also find eating smaller portions helps also. Most my food choices are bland. No spicy stuff. 😮

You don't seem strange at all, water gives me heartburn, too. However, I put sweet pickle relish into my potato salad and have never added olives, but that looks great. I like dry foods, too. Most sauces and "toppings" give me heartburn or upset my stomach, even though I love spaghetti and lasagna, but even those a little dry. How do you feel about capers? I only discovered capers a couple of years ago, you have to rinse them, and consider them in your sodium intake, but they are yummy.

I like New York potato salad. Publix makes a good one.
