I know I prefer chicken to rabbit, I have eaten rabbit before. It was called Pel-freeze rabbit bought in the supermkt. I have not seen it in years.

Yes it's lovely it's a great way to use left over veg from a Sunday roast dinner potatoes cabbage and any left over veggies mashed up crisped up and can be eaten with cold cuts of meat and some pickles ( beetroot piccalilli pickled cabbage or onions I like it with hp or daddies brown sauce it's also nice with chrispry fried bacon. Highly recommend 😊

Those judges are so full of it. One’s heart singing is up to the individual, very subjective. Nathan’s dish may make many a heart sing, just not these very snobbish and critical judges.

The problem is today unlike when my parents smoked kippers in the sixties to eighties the herring smoked today to make kippers are imported frozen herring, yes oil content good but large fish with large bones. In my parents day we only smoked summer local and west coast loch Fyne herring to make kippers. They would be classed as a luxury dish nowadays. Sorry I don’t recognise any of today’s kippers as anything like we produced then.

It’s used kind of as a relish in Britain for things like ham, salami, and other cured meats. Or eggs. It’s a sharp/acidic relish meant to cut through rich meats.

Not a Brit, but a Swede, rhubarb is quite popular here also. I love the stuff. It has a sharp tanginess when raw or lightly cooked, mellows quite a bit when cooked for a longer time. To me it has something in common with apples in flavour, but obviously completely different in some other ways. I find the flavour of it very refreshing. Also it's so linked in sense memory to summer. I can certainly see how it could be a divisive (love it or hate it) kind of a thing. I (and I think a lot of other Swedes) love it. Then again we also love licorice! :)

Also in this video it doesn't matter if it's pork or lamb ,use what you have then think about the sauce, starch,vegetables and plating sequence within the theme of the establishment and I like to go INTERNATIONAL anything sells and wording is very important as I have learned and selling price is very important as many places are way overpriced and I will not spend 9.00 for a side of FRENCH FRIES I rather make them myself for 3.00 and fair price I will say because you will scare them off and will never go to your place and they will tell the whole world don't go and I am very picky where I go go to the supermarket and make it yourself at home.

In this part of the video it's extremely rare to see a woman making a hot dish,in all my years cooking because of pressure, heat, and being very creative and only once have I seen that.even men can't take the pressure and I have seen them break on the line but I am used to it by now but you have to be very creative like being a floor GENERAL and I have taught cooks to be a CHEF but you have to understand food in general years of experience and I have given them my CULINARY EDUCATION and I called my alumni and the tuition is.73,000 for 2 years and I paid 15,000 for my education but that was years ago and I started cooking at 16.

Turbot is expensive = One of the best fish in the world. As if the troop would know or care about the price of the fish they're eating. All anyone really cares about is the flavor that they're getting, and turbot is highly overrated.

Ham, pease pudding and beetroot were my favourite summer lunches in Northern England. My Grandma used to make pease pudding in the oven. It was amazing!!!

He's doing it completely wrong. He's supposed to sous vide the pork belly and the roast it to crisp the skin, and not roast it first and then sous vide it. What an amateur understanding of how cooking works.

I was born in Cambridge Avenue, just down the road and remember a pork shop in that area…delicious pork pies and of course pease pudding…but I knew it as the pork shop only…
