Aww thank you so much! And thanks for watching. So I usually am very calm when I cook. But the caveat is I take a very long time 😅 (unless I'm rushing to make dinner for the kids) lol because cooking is art to me. So I tell everyone out of the kitchen and to give me a few hours lol.

Here's a simple same-day focaccia bread recipe that you can follow to enjoy delicious homemade focaccia in just a few hours: Ingredients For the Dough: - 4 cups bread flour - 1 tsp salt - 1 tsp honey - 1.5 tsp active dry yeast - 420ml warm water - 2 tbsp olive oil For the Topping: - 2-3 tbsp olive oil - Fresh rosemary (or your choice of herbs) - Flaky sea salt - 1 tsp pesto - grated garlic - Optional: parmesan or mozzarella cheese, olives, tomatoes Instructions 1. **Activate the Yeast:** - In a medium bowl, combine the warm water honey, and olive oil then sprinkle the yeast on top. Stir gently and let it sit for about 5-10 minutes, until it becomes frothy. 2. **Prepare the Dough:** - In a large mixing bowl, combine the flour and salt. Add flour to yeast mixture. - Mix until a sticky dough forms. 3. **First Rise:** - Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp kitchen towel, and let it rise in a warm, draft-free place for about 15 minutes. 4. **Shape the Dough:** - After the first rise, stretch and fold on 4 sides - set aside and cover for 15 minutes. Uncover and stretch and fold again and cover for an additonal 15 minutes. Stretch and fold for the last time and then cover for 1 hour and 15 minutes 5. Prepare the topping To a small bowl whisk together 2 tbsp of olive oil and water, rosemary, pesto, and garlic 6. Transfer dough to a well-oiled baking sheet and add topping mixture on top of dough with cheese of your choice. Fold dough on both sides like a burrito and flip. Cover and let dough set for 1hour 30 minutes. 7. **Preheat the Oven:** - While the dough is undergoing its last rise, preheat your oven to 430°F 8. - Just before baking, use your fingers to dimple the surface of the dough. Drizzle generously with olive oil mixture, then sprinkle with flaky sea salt and your choice of toppings like rosemary, cherry tomatoes, olives, etc. 9. **Bake:** - Bake in the preheated oven for about 20-25 minutes, until the focaccia is golden brown and cooked through. 10. **Cool and Serve:** - Let the focaccia cool slightly on a wire rack before slicing. Enjoy it warm or at room temperature. ### Tips - **Warm Environment for Rising:** If your kitchen is cold, you can create a warm environment by placing the dough in the oven (turned off) with just the light on. - **Crispy Crust:** For a crispier crust, you can add a little more olive oil to the bottom of the baking sheet or skillet before adding the dough. Enjoy your homemade same-day focaccia bread!

Trying to make more recipes from my cookbooks instead of having them sit pretty on my kitchen counter 😅 . . This Lemon tart was pretty good, I Tweaked a few things though. . . ⬇️ Recipe Ingredients For the Lemon Filling 3 oz. cream cheese, softened 5 egg yolks 8 oz. sweetened condensed milk ¼ cup lemon juice ¼ cup heavy whipping cream ½ teaspoon lemon zest 1 tsp pure vanilla extract For the crust Graham Cracker Crumbs Melted Butter . . Instructions: Preheat your oven to 350°F (175°C). Press Graham cracker mixture into the bottom and up the sides of a pie dish. Prick the bottom with a fork, then bake for 10-15 minutes, or until lightly golden brown. Let it cool. In a mixing bowl mix 2 oz. of softened cream cheese with an electric mixer until it is completely smooth. In the same bowl whisk together the eggs, sweetened condensed milk, lemon juice, heavy cream, and lemon zest until well combined. Pour the lemon mixture into the cooled tart shell. Bake the tart for 20-25 minutes, or until the filling is set. Let the tart cool completely before (2 - 3 hours or over night) before adding cool whip or whipped cream and fruits. Slice and serve & Enjoy! 😊

Here's the simple recipe I used for my red wine braised short ribs: Ingredients: - 4 pounds beef short ribs - Salt and black pepper to taste along with cumin, paprika, garlic and onion powder - 2 tablespoons olive oil - 1 onion, chopped - 4 garlic cloves, minced - 2 cups red wine (such as Cabernet Sauvignon) - 2 cups low sodium beef broth - 1/2 Cube beef bouillon - 4 tablespoons tomato sauce I used sauce instead of paste. - 2 sprigs fresh thyme - 2 sprigs of rosemary - 2 bay leaves Instructions: 1. Preheat your oven to 325°F (175°C). 2. Season the short ribs with seasonings 3. In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. Brown the short ribs on all sides, working in batches if necessary. Remove and set aside. 4. In the same pot, add the chopped onion. Cook until softened, about 5 minutes. Add the minced garlic and cook for another minute. 5. Stir in the tomato sauce and cook for 1-2 minutes. 6. Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and cook for 5 minutes. 7. Add the beef broth, thyme sprigs, and bay leaves, crushed beef bouillon and stir. Return the short ribs to the pot, nestling them into the liquid. 8. Cover the pot and transfer it to the preheated oven. Braise the short ribs for 2.5 to 3 hours, or until the meat is tender and falling off the bone. 9. Once done, remove the pot from the oven. Skim off any excess fat from the surface of the sauce. 10. Serve the short ribs hot, spooning the braising liquid over the top. Enjoy! Feel free to adjust the seasonings and ingredients to your taste preferences. Enjoy your meal!
