Please never invite me to eat at your house. You're using a fork on a Teflon pan that's clearly already been beat to hell. The first thing everyone learns about non stick pans is to NEVER use metal utensils with them. The amount of Teflon you've fed to people you supposedly care about is criminal.

OK, let’s give her some credit. As a Mexican, I’m flattered to see foreigners cooking this everyday comfort food recipe. Said that, the process is all wrong. Although chilaquiles are meant to be a simple dish with not a lot of prep; there are some rules here that were evidently broken: • If you roast or grill tomatoes, there is no point in peeling them -you’re taking the smoke flavor and aroma out, and that was the whole point of roasting or grilling them! An alternative version would be boiling the tomatoes along with the chiles. • You need to add some onion (might be roasted) and garlic to the blender with the tomatoes mix. • After the blender, the salsa always goes to the pan or pot and gets seasoned. • Purist will say you need tortillas and then chop them and fry them. If you’re in a lazy mood, it’s OK to use tortilla chips or “totopos” but there is absolutely no point in putting them on the pan if they’re already fried. 🤦🏻‍♂️ They go directly to the sauce in the port to be soaked in it. • Onion goes as a topping, always raw and chopped. • Cream goes on top, not on the side.
