It’s almost like an inside joke, because the meth in the show was all rock candy, so they’re figuratively constructing the big rock candy mountain.

I personally thought it really added to the story. It aided in character development, answering questions from BB, threw in a huge conflict. It wasn't so much about the physical construction, so much as the building of an empire by a powerful criminal. It actually makes his death seem anticlimactic by comparison, with how much work and manipulation went into his empire. Not to glamorize the life or the decisions that were made. I can't fathom the paranoia and the pressure he was under the whole time.
