Nana's potatoo salad.She was born in 1905 for reference. Make some hard boiled eggs. I usually do 4 - 6. Peel 6-8 Russets. Cut into potato salad sized chunks the way you like them. Boil in well salted water until just done. Do not over cook the potatoes. Just don’t do it. While those cook: Make a roux of 1 TBS flour to 2 BTS Butter. Allow to cool. Clean and chop celery and onion as finely as you like it. Peel and chop the hard boiled eggs. Measure out ½ c sugar. In a bowl beat an egg well. To it add 1 tsp salt, ½ c water, ½ c vinegar, ½ tsp prepared mustard. I like Maille Dijon and I use more and beat it together. As the potatoes are finishing cooking, add the mixture plus the sugar to the roux and bring to a boil until it thickens. Drain the potatoes well and sprinkle a tablespoon or two of celery SEED that you have crushed in your palm or in a mortar and mix it together. Pour the cooked mixture over the hot potatoes and combine gently enough to keep the potatoes intact but enough to mash some up spending on the consistency you like. Once it all cools, add the chopped egg, the celery, the onions and mix. Add good mayo to the consistency you like. Taste it for salt and for enough celery seed. Top with paprika and slices of hard boiled eggs if you like the way that looks. NO. relish is evil. Dill relish is worse and shouldn't be allowed to exist in any universe. Carrots and peas do NOT go in potato salad. They are the definition of “what isn't potato salad”. Ham doesn't go into potato salad. Nothing you buy in a fancy store (except maybe good mayo) goes in potato salad.

What a great idea Kristi!😍 We have a recipe from our great grandmother for a Banana Nut Cake. It's something we make when we have overripe bananas. I think we could make cookies using overripe bananas as well!😘 I'll let you know if/when I make them, I think they would be good and it's another way to use the overripe bananas!😚 Most kids love bananas and most kids love cookies!
