OohWee those look great! I've only had stuffed shrimp one time (not smoked unfortunatley) that used a cornbread dressing and diced andoulie. It was really good.

That looks awesome, got to give it a try! I tried smoking shrimp once and didn't care for it because it was "too" smokey for me. With that pan protecting the bottom and the cheese mixture on top, that'd be just right!

I make a "cheesy chickenbog" it's still chicken bog only with cheese. Mannnnn. Its some good. Take one of them little aluminum "pot pie" bowls,put a layer of bog then a layer of your favorite shreded cheese,then continue until you top it off with the cheese. Cover in foil....mannnnn. you can line up a whole big ol table with these single serving dishes and make all the folks happy!!! Make this on video !!! All I ask is a shout out. Lol

I've done these using a dry rub and a good lager, but also did it a few times with a wet jerk marinade that the bird sat in overnight. I reserved some of it to boil so I could serve it with the finished product or baste with and the rest went into the can. I did mine indirect on an OG Weber using charcoal. You need to rotate the bird about 90 degrees every so often for even crisping. So good.

Beer can chicken is always a fun cook, and tastes as good as it looks. For the rub, oddly, I prefer Kosmo's Texas Beef rub. Beer: Shiner Bock or Guinness. Great Vid.

i'd try it, and i hate ranch dressing or seasoning. Also not a mayo guy. I'd still try it, no harm. I just can't bring myself to buy ranch dressing or mayo - cant't live in my pantry or fridge

Pork Loin is one of my go-to's (not to be confused with tenderloin). Easy. Cheap. Delicious. Great job. Pro-Tip for anyone that wants to amp it up: While you're trimming it, go ahead and butterfly the loin. Very easy to do, can be a rough butterfly. Then smear cream cheese in a thick layer on the inside (for ease you can buy whipped cream cheese), then season the cheese with your dried herbs of choice (I'm partial to heavy dill weed and then a little Badia Complete herb seasoning). Roll back up into the "log" shape. Season and smoke as shown here.
