I made this today and it was fantastic. A little spicy, a little sweet. So good. I am bengali, but i have grown up in the US and am not familiar with Bengali food very much. I plan to try your other recipes.

please can you help me, I had Sambaram near Malampuzha Dam - they are doing some kind of fermentation with (ginger, kanthari milagai, salt, curry leaf, buttermilk & may be something else which I do not know) - for a couple of days - please let me know if you know how they do the fermentation process another one I had near Ciso Marine World near Chavakkad, they have made a paste of (ginger, kanthari milagai, salt, and curry leaf ) - with that paste, they just added buttermilk - was very nice.

DO NOT USE DARK SOY SAUCE FOR THIS!! It's way too strong. Regular light soy sauce works much better.
