One more question: what is the preference for green chilis as opposed to red (ripe) chilis in Indian cuisine? Each fall during harvest season, I wait until the jalapeños are red before I go to a local farm to pick them, then freeze enough of them to last me a year. I prefer the flavor of red chilis since they are sweeter, but I suppose there are cooking applications where the slightly more bitter taste of green chilis might be preferred. Sometimes a red jalapeño has a little bit of green on it, providing a nice contrast of color and flavor.

I tried making your recipe using pre-roasted (semolina) rava I found in a local Indian grocery store, and found it to be delicious, the very definition of comfort food, though I didn't grow up eating this dish. The flavors are a lot more varied and interesting than those of Italian polenta, which is much more plain. And just one cup of rava produces a huge amount of food, enough for two meals. Just one question: what is your opinion on the inclusion of cumin seeds and minced ginger root in upma dishes? Although I found them listed as ingredients in other upma recipes, I didn't include them because your recipe didn't call for them, and because these ingredients would seem to me a bit out of place in this dish.

This dish looks lovely, and you made a very nice video. In northern Italian cuisine there is a similar (though much simpler) peasant dish called polenta, which my grandparents, who were from a hamlet near the city of Piacenza, ate for virtually every meal of the day, 365 days per year, a century ago.

@@RajeshriRecipes My father, as the son of Italian immigrant parents growing up in New York City in the 1930s and 1940s, was resentful of being forced, as a child, to stir the polenta endlessly (to avoid it burning on the bottom of the pot). But I, as the third generation, really enjoy cooking and eating it. I was told that, in addition to eating polenta for every meal of every day, my grandparents' family back in Italy, as landless peasants, only had a chance to eat meat one day per year. Being a vegan, I myself eat meat zero times per year. ;-)
