Lidia, if you're still reading these comments I'd like to say that your videos are both uplifting to me and also comforting knowing that the hells of hand mixing can be a time to bond with the process and the dough. That being said, could I ask you how many litres/gallon tub/bin do you use to mix the dough in because I have been searching around KZfaq for someone to guide me on that purchase.

Hi Lidia. Thank you for sharing your journey with us. I just wanted to share somethings that might be helpful for stress if you are interested. Im not a doctor but i do work at a health food store that helps tons of people with some similar health situations. Holy basil is a great adaptogen and helps people with maintaing their stress levels as well as ashgwandha and reishi. Stinging nettle and quercetin can help with allergies. It sounds like your trying to birth a new life through letting go of a old life such as leaving a job that you knew and doing the bakery life. Running symbolically would represent freedom and running in the right direction. You are very brave and in that powerful by being you through it all even if it feels scary and in the transition from fear to love it is like this. As we break through patterns and navigate life and strive for what we invision how can anxiety not come up? Keep doing a amazing job. I enjoyed watching your videos. Wishing you happiness on your journey and best of insight in everything you do!!

Hi! Thank you for your well wishes and suggestions! I will say my anxiety is significantly less now that I'm not juggling a million things at once, but the seasons of life are often cyclical so these things will no doubt come up again. It's definitely a growing experience.

Hi I really admire your dedication to your baking. I just want to add a helpful comment about your table height. As I’m watching this you just commented it is too low. I totally agree and as a physiotherapist it would start to give you back pain. Why don’t you add some lockable castors to your table. It will make it higher and allow you to move it around if you want to. I hope that is helpful x

I run a small bakery (solo operation) and we sell at a weekly year round Farmer's Market. Trust me, I know the feeling of taking 1/2 or more of your product home at the end of the day. Your bread looks amazing and you obviously put a lot of time and care into it. Maybe talk to the market manager, we have a system that the market board has to approve all vendors and their products, this limits the overlap and makes for a more interesting market as the selection is more diverse, it is clearly written on your application what you make and can sell. I am the Bread guy someone else does cakes and sweets, and another pies ect, everyone has their specialty. Hopefully that helps. Keep up the great work and good luck.

Thank you! It is tough, but we control what we can and take the rest in stride. I did talk to the market manager, who assured me the regular season wouldn't be like this spring preview. And I think they took to heart what I said about what the market can support. Applications work the same way here, but I have such a narrow selection it's easy for other bakers to overlap one (which turns out to be half) of my products and affect the whole market for me. Oh well, we keep baking. Good luck to you too!

I have it all written down, so yes! To the first few months of markets, I took 54 classic sourdough loaves, 11 full size focaccias, 24 mini size focaccias, and 24 packs of 3 bagels each (everything seasoned and plain). Around mid-August the market starts to wind down, so I took less then. :)

Hi! Congrats on your cottage bakery!! It's taken me years to get to the point of investing in an oven. Slow growth is the best growth! I got my bannetons from amazon but I find I need to use the linen covers with them because the bannetons themselves are splintery and not great quality unfortunately. :/

Curious how much you sell the sourdough bead for? Seems like a bunch of work and long hours. But I know it is a labor of love as it is when I make and sell my crafts.

Hi! It is definitely a labor of love. Nobody became a baker or a crafter because it was easy to make money lol. My first year I sold the loaves for $8 and focaccias for $7. Now I sell each for $8 and the half-size focaccias for $5. I've tried not to raise the prices too much (even though the cost of flour literally doubled at one point in 2022). There's a fine balance between getting paid what you deserve and also making your products affordable to others.

I have a Cottage Foods certificate, which allows me to sell packaged shelf-stable (not refrigerated) products directly to consumers. The Cottage Food safety course is available through the Department of Health at libraries, through a UC, etc. A certification lasts 3 years and it cost me 40 bucks. Well worth it!

@@liquidtoastvr I make all my bread at home and keep the animals out of any food prep areas (easier now that there are only 1 dog and 2 cats in the house; there were more when this video was filmed). Colorado cottage food law allows pets to be in the house as long as they're away from the food.

Studies demonstrate that SAT and IQ tests demonstrate up to a 0.9 correlation (considered extremely high in statistics). Despite all the social discredit of IQ and seemingly SAT as measures of intelligence and smartness, they are found to correlate well with happiness, quality of life, and wage. Though CollegeBoard, KhanAcademy, and many other educators like to preach that SAT is not an intelligence test, actions speak louder then words; it turns out to test how smart you are regardless if it is intentional or not. For this reason, however, I do not quite like the SAT for discriminating between the smart and not, oftentimes more so than work ethic / aspiration. Yet it is cherished by society as indicators of your academic success for which I have to take it seriously. Secondly, you cannot discredit everything that you cannot succeed on or for any other personal reason / bias. This way you will say "There are other ways to get a scholarship [or anything] than SAT [or anything]", failing to just do the task like SAT [or anything] that can lead to success.

This is literally not true. First of all, correlation does NOT imply causation. Second, it's been proven that GPA is a better indicator of success than the SAT as GPA is based around your performance across 4 years and the SAT/ACT are based on one day. Finally, the SAT/ACT really doesn't test your intelligence whatsoever.

Sometimes, shit doesn't work out the way you thought it would. I think living on your own and really getting a taste of what it will be like not having a safety net (like your school) to fall back on is more important than finding your permanent spot in the work force. If you have a job currently that gives all you need to survive, then I think your on a great track. Survival should always comes first.

My last two years of high school was rough. My friend's sister was in kindergarden and died from a brain tumor. A friend of mine died of leukemia. Another friend survived leukemia. Thank you for raising awareness and your dedication.
