Sorry to say my dear, the issues of the yarn coming apart is due to the quality of your yarn. I use Bernat blanket #6 yarn and almost never have those fraying issues.

How do I add another ball of yarn for a larger project?

if you end up with 1 extra stitch after doing the increase around the ring, do you just have to start over or is there a way to tell where the extra stitch is and just go back to that? edit: I counted as I unwound it, i have 2 stitches in each stitch like im supposed to, but im counting 17 stitches after the increase... i might have 9 on the original ring instead of 8, but im still counting 17 stitches after the increase which still doesnt add up...

I finally did it! Thank you!!!!! Edit: the secret is crocheting the extra strand into the first round. That will allow you to pull & tighten. No other tutorial really stresses that.
