Ok.. I answered my own question!.... I often do overnight bread and just let it sit out... I use shower caps to cover the bread then I place it inside a bag and close it. works every single time!

I bulk ferment during the day/evening and I cold proof overnight in the fridge. I bake in the morning 😊

Oh sorry. Idk why it shows up blinking on the video. The recipe is 135grams of active starter, 780grams of warm water, 1000grams of bread flour and 20grams of salt. This will make two loaves. I’ll add it to the description as well. Sorry about that.

That's a really nice bread! I just started with sourdough and my bread has a nice crust, but the crumb is wet and hard (super chewy), despite it having great bubbles. Do you know what am I doing wrong? Thanks!

Well it could possibly be a few different reasons. Cooling time If you cut your sourdough while it's still hot, steam trapped in the crumb can make the interior wet and gummy. Oven temperature If your loaf is golden brown on the outside but wet or gummy on the inside, it might be baking too quickly. Try reducing the temperature and baking for longer. Over-fermentation Over-fermentation can make dough wet and sticky, and prevent it from rising properly in the oven. Let the dough rise until it's about 20-30% larger and you start to see bubbles forming Maybe your starter wasn’t strong enough? How long do you leave your bread in the oven? & do you wait for it to completely cool down?

Best guess for flour weight is 128 grams per cup. Water is 240 grams per cup. So we have: 416 grams flour. 360 grams water. 10 grams kosher salt 2.4% (a bit too much, 8 grams would be under 2%) 360/416= .865 x 100 = 86% hydration

@@WannaMartinez23 Thanks for posting, some people don't like to scale in baking for some reason, your post helps them. Flour weight by volume can vary a lot depending on where you are in the world and conditions in the home.

For total success and no guessing on the flour use a scale and bakers percent. Scales are cheap these days. Learn bakers percent. This turns out to be 82% hydration, it is the original no bake recipe from the 2006 craze. 430g flour 345g water 1¼ teaspoon (8g) salt 1.8% ¼ teaspoon (1g) instant yeast 0.23% (this is an overnight fermentation in the fridge).

You got it down lol I didn’t put it in the fridge overnight. I left it on my counter. But I’m sure that’ll work too. I do have a scale. But this recipe didn’t require one. So I didn’t use it. If I was making sourdough, it definitely use my scale.

You can even bake it in a regular pot or a cast iron skillet. It works because I've done it before and it bakes nice and golden brown.

Yes, you definitely can. I just do it in the Dutch oven because that’s what I have. So for those people who do have a Dutch oven, they can use it to bake their bread.

I think you can use a loaf pan or a regular pan. Just add a tray of water either under or next to it, to give the bread steam. Thats what the Dutch oven does. It helps bake the bread with steam when the lid is closed 😊
