Hello in from Phillipines, I'm starting my rice wine brewing this days. Do you open your container from time to time or never opened until 1 month of first fermentation? I'm definitely trying your recipe.

Yeast needs oxygen to ferment so for 3-4 days I don't airtight the lid .. after that I make it airtight and keep it for a month without opening it. You can start enjoying the wine from 3rd week
