Yeast needs oxygen to ferment so for 3-4 days I don't airtight the lid .. after that I make it airtight and keep it for a month without opening it. You can start enjoying the wine from 3rd week

I don't think clay pot will work. To ferment Soybeans it needs heat. My pleasure 😊

Yes you can use any rice but I think it'll be better with slightly sticky rice
