Oh my gosh, that looks incredible! I have so far lost 30 lbs on my weight loss but I'm definitely going to try this and just walk an extra mile that day 😊 This has always been one of my favorite dishes when going to a nicer restaurant so I definitely want to try my hand at it! Thank you so much!!!

I've never been able to make dairy free pudding that set nicely. But I just can't keep eating packaged pudding because the dairy hurts my stomach. I was so excited to see yours look so creamy. I made it tonight and it was delicious!! And so easy! Thanks for the recipe and tutorial:)

U don't cook eggs in a cast iron. Cast iron is better for bread or biscuits.

I was going to make this, but after chopping my rhubarb, I only had about 2 1/2 cups. I added a few strawberries just to use them up. I cut your crust measurements in half and pressed it into a shallow tart pan, instead of the pie plate. It was a metal pan with removable bottom. I also used corn starch in the rhubarb instead of flour. My batch of rhubarb was the very pink variety. With the strawberry, it was pretty as is, and didn't really need the top crust. But I love streusel topping, so I mixed some up with brown sugar, a little flour and butter. Sometimes, Necessity is the Mother of Invention. Hope it turns out, OK! *UPDATE* Turned out great! Next time, I am going to use melted butter in the crust instead of oil, as someone in the comments suggested. This is a "keeper" recipe --thanks much!
