Wine would you not destem the grapes before fermentation? Surely the stems are only bound to bring bitter flavours and other unpleasant aspects

Somehow Gamay makes a very thin light wine so now I know why people use Carbonic maceration when making wine from Gamay grapes so they can extract some flavors from the skin.

So is Beaujolais and Gamay the same grape with different names ?
