Watching all these American Smoking and BBQ videos I've figured out that they just really like sugar. The phrase "a little bit of rub" usually involves half a bottle, soon to be followed by a sauce to help glaze it at the end. Where's the beef?

For the burnt ends at the restaurant I work at we just cut off any piece at the end that has full bark, we use the entire little flap area as the moist side of the brisket along with the lean
