Great video. I like cooking on the boat and I have an idea for using my smaller Blackstone griddle on a similar rig. 1-Magma adjustable rod mount attached to starboard or maybe a layer of plywood. I might drill some holes in for the four legs of the griddle to nest in. Or something similar to secure it to the mount.
